When he said he wanted the different parts inside the burger to really stand out on their own, that made a lot of sense to me. Hi Nick. The burgers looked very good. Believe it or not, my local butcher has been making burgers like these for years. They mix all the ingredients into the burger. He has many different ones. He makes apple, caramelised oinin, black pudding, my favourite, haggis, and many others. They have won awards for quite a few. Keep up the great videos😊
The talk around Kento having a baseball background was nice to hear. It reminds me of Gordon Ramsay's Last Meal interview, where they also talked about how chefs are built like athletes and have similar conditioning.
I've had jam on a burger during a charity event we have around here, and it worked surprisingly well. The sweetness played well with the savory of the burger.

The fruit and meat can work very well and you could alter the combination to what would be in season at that moment. Alter with more tart, sour, sweet fruit. both jams, compote or made in fruits. Alter with the type of meats or even the cuts. It could even help have regulars come back as to taste what is in that season.
I was gonna make a joke about jellyfish jelly, but in all honesty it really does seem like a perfect burger for me. Which only gets better if apple pie makes it onto the menu. Not much more American you can get than having burgers, apple pie, and beer for lunch. Which is a strange thing to say, going from America to Japan to have an All-American-Lunch...but it's good.

All together it’s like your getting pure smoke applewood burger but with lite punch of apple taste that meat dose not have to compete with but able to mix all in one too point it makes since because it not infuse like smoker dose to the meat and kills the meat taste.
