Fads always fizzle, then what will they do, drive a taxi ? Ive retired after 50 yrs as a french trained pastry chef, I've seen them come and go, but traditional quality wins in the end. Over the years I saw many kids described as a rising new star chef, all of them are doing something else now.
I love me an old world bakery myself, but I also welcome the newer bakers with their more "exotic" flavors and takes on the baking tradition. There's room for everyone. Cooking and baking are ever evolving, as we absorb the influences and ingredients of other cultures and new ways of doing things. American cuisine itself has evolved and changed over the course of just the last 40-50 years and has come out better for it. Things that were once deemed "exotic" 30-40 years ago are now mainstream. There will always be room for tradition as well as for innovation; it's what makes baking and cooking so interesting and dynamic.
Thanks for this descriptive documentary. I appreciate the work that small bakeries do for our communities.
