Shane, I get a pretty fine grind with my Vita mix. It does much better than my coffee grinder. I let it run several minutes doing batches just as you did. Out of about a gallon of dried beans I end up with only about 3 T that I discard. I do put it thru a fine sieve just as you do. My powder turns out dark and beautiful. I roast my own coffee beans, and I’m thinking of trying to dehydrate some vanilla beans, grind some and have it ready to add a little to my grinds (per cup of coffee as I like to make pour over or french press coffee). 😋

As always, a great very informative video! You were asking for questions for your next video; I read of people adding vanilla pod seeds (what some call caviar) to honey but have then also read how some of them have had the honey crystalize. Since you make honey and you make vanilla, what do you think? I can't think of any other questions because you explain vanilla-making steps so well. Thanks for all your help!
Honey Crystallization is very common and nothing to worry about. Honey will crystalize even with out putting anything in it. I have talked to many beekeepers and we the science behind it crystalizing but really don't why and when it will crystalize. I bottled 50 lbs of honey from the same batch and half the bottles crystalized and the other half were super clear and never crystalized. If you have a bottle of crystalized honey you can put in pot of warm or hot water and it will clear up and turn to liquid again. Just be careful with plastic bottles and make sure your water is not over 110 degrees. I use Hot tap water from the faucet and just let it sit for awhile or place the bottle in a window with direct sunlight. The warmth from the sun will de-crystalize the honey over a few days. If I am going to make vanilla honey I usually just add a little extract to it and not the bean. I think its a waste of a good vanilla bean to be putting in honey sense honey will not extract all the flavoring out the vanilla bean. Ok I hope that helps. I will be possibly be doing a video on this topic soon.
Oh, also, I’ve started some vanilla sugar. But I prefer the natural unbleached sugar. I feel it has a better flavor and like that it has less processing.
Do you have a favorite brand of natural unbleached sugar? I’m trying to use less processed sugar, but the one brand my store carries upsets my tummy.

You should use a molcajete to grind you beans. You can reduce them to the texture of talc powder.
I was wondering about this. Do you think that the oils from making garlic, Ginger and tumeric paste would interfere with the vanilla? Or does a goid cleansing get rid of those oils?
Even though it is dry ingredients, you should use a different measuring cup for both. Being a cook/chef, that to me is cross-contamination. Just a helpful hint.

Regarding residual smell from spices in your grinders:
brush them out with a dry paint brush dedicated for that purpose, then wipe out with a paper towel or clean cloth soaked in grain alcohol. Plastic retains smells from spices & herbs with a high oil content, yes. I use one coffee grinder for everything because I don't want 20 of them hanging around for grinding all my spices, herbs etc (I make herbal formulations of all sorts, as well as grind a lot of oily spice blends).
The other solution is to use only grinders / blenders with glass containers. Then it's a non-issue. Some jars will fit blender bottoms, which is something I learned from my grandmother.
That's one of the reasons I never bought a Ninja - the plastic blending containers.
Yeah star anise is the worst for contaminating equipment. The oils are so harsh it will eat into plastics. I deep clean my grinding equipment every time I switch spices to even sanitizing them. I am a little OCD when it comes to my kitchen and my equipment. I use a lot of essential oils when feeding my bee's and learned back then some of these things just have to have dedicated equipment. There are just some spices and essential oils you just cant clean out of every nook and cranny. I do agree glass is the way to go and wish I had the money to buy all glass equipment. I am slowly buying new equipment to compensate for this issue. I want a food grinding mill for grains, have friends with them and this seems to be the best way to get the results I am looking for.
A Vita Mix will grind it superfine. I grind my own wheat from wheat beries.

Your coffee grinder is a blade grinder. Try finding a burr grinder instead. It is more uniform and grinds finer, like all the way to espresso grinds.
To get it ground to a very fine dust, you can use a flour mill. I can't imagine life without my Grainmaker 99 mill...

I have been using the food saver brand jar sealer. They are currently unavailable except on ebay. But the price is why out of line. I just check Amazon every couple of days and one will show up. when you see it buy it or it will be gone fast. But I see another company is making one now and is available. I will link it for you but I know nothing about it other than it is a jar sealer like the one I am using. I know freeze drying is better than dehydrating but never got to try it my shelf. I would like to own a freeze drier in the future for sure. Let me know how it goes and I am sure it will make it much finer grind.

To be honest i never really paid attention to it. I have a batch going right now that should be dome in a few weeks. I will try to remember to measure it out this time.

Yes if you have a freeze dryer that is the best way to go for grinding vanilla pods. I wish I had one to use for sure.
I have watched all of your vanilla episodes and wish I would have had this information when I started my first batch over a year ago! I looked everywhere online and RUclips for info about making vanilla and I feel like they all said the same thing and I wanted more. I really appreciate you sharing the FDA stuff (that is one of the things that most info I found online didn't mention really), your method, and your emphasis on consistency and marketing!

-For testing my vanilla, do you think I could use normal household alcohol? Like rubbing or isopropyl? I don't really want to go buy more alcohol yet so wondering if I could get a way with using what I have in the house.

Household alcohol is made up of ethanol alcohol and has different properties. Its not recommended at all even for testing. Vanilla sugar can can be used for anything white sugar is used for. We us it in making sugar cookies, coffee, teas, cheese cakes and scones. With home made extract you can use less vanilla than what the recipe calls for because it is much better and stronger. But in our case we use twice or three times as much than the recipe calls for because we love it that much. One of the reason why I make so much now.

In the oven just turn your light on for the warmth. I would just preheat your oven on the lowest setting. While that is happening put your beans on a cookie sheet. once the oven is up to temp shut it off and put the vanilla beans inside and leave the light one to keep it warm. They should be dry with in 24 hr or sooner. Most ovens don't go below 170 and you dont want to cook them.
I have a question about the caviar or seeds and paste. Can they just be kept in the fridge or do they need to be frozen or is there some way to preserve the paste and seeds? I have them separate. How long will they last in the fridge? Have learned a lot watching your vanilla vids. Thanks!
I don't even waste my time with seeds or paste because the shelf life is limited. Everything you make with paste can be made with a good extract. If you going to save the seeds I would put them in a small jar and then put in a 70 proof or higher alcohol to cover them. This is the best way store anything vanilla to make it shelf stable. Fridge and freezer result in mix out comes from time to time. They are not the best solution sense the cold can change the structure of the vanilla and it doesn't mean it keeps out all bacteria. It just slows it down a little bit. I only make good strong extract and leave the seeds in the extract. If I need seeds in my dish I just shake the bottle and pour a little in a spoon. I see a lot of people having issues with storing seeds and paste like your going through and that's why I don't make it my self. I hope this helps.
Does the vanilla sugar need to sit for a length of time or can you use right away?

I bought fresh vanilla beans for making vanilla sugar for this Christmas. I have already several jars of vanilla extract going, but not done yet. Do I have to dry these fresh beans or just put them in the sugar?
I know some people use them just as they are for vanilla sugar. I would dry them out a little bit before using them. The moister will make the sugar clump I even have that problem sometimes with completely dried vanilla beans. Personally I never use fresh vanilla beans to make my sugar. I think it is a waste of money sense you cant extract all the flavor from the beans in sugar. When making sugar with fresh beans your leaving behind flavoring that can only be extracted with alcohol. This is why I extract first then use spent beans for sugar. This way you get the most out of your beans and hard earned money.

I’m new to vanilla extraction. I didn’t know you could eat the pods and all😊 I have a Braun emersion blender with a grinder attachment that goes with it. I use it for grinding spices. Makes great powdered stuff.
The pods are fiber like anything else and that's why you have to grind them as fine as possible. I use it in my coffee sometimes and its like having coffee grinds in the bottom with the bigger pieces. But they chew up just fine. Hahaha
Still looking for a way to break your beans down to a fine powder? Go get a rock tumbler from Harbour Freight, add some glass marbles and your dry beans and there you have it...you can make it the finest powder ever.
That is a great idea. I have a couple fancy tumblers for brass i never though of using. I will use stainless steel balls though because glass marbles break down in the tumblers.
I checked all the comments and except one, seems all other people have some dehydrator. I don't have such thing, so is there any recommended period for normal "shelf / open-air drying" of the pods? A week, two or month? Thanks
You can use your oven. I would turn the oven on to 350deg and preheat it. While it is coming to temp spread your beans out on a cookie sheet. Once it reach temp shut the oven off and put your bean inside and let the oven come back down to room temperature. Then crack the oven door and turn on the light. The light produces enough warmth to dry out the beans. This might take a day or two this way. Check your oven some now have a lower setting that gets down to 140 150 for dehydrating. I have never tried open air drying. I have heard of people drying them in the sun during the day and them bring them in the house at night in air tight container. That might work but I never have tried it my self.

Vanilla sugar is not a replacement for extract. If the recipe is calling for extract you really need to use extract. Vanilla sugar does have flavoring in it but not enough for flavoring a recipe. I use the vanilla sugar as a accent to a recipe like when I make sugar cookies I replace the white sugar with vanilla sugar. But I still add the same amount of extract. This really gives the cookies a more gourmet taste and a little richer flavor. I also use the sugar in my coffee and teas.
Hi, I've watched this vid twice as it's a great tutorial. I made my first batch yesterday using a collection of dried vanilla pod ends and caviar from 2 fresh pods. I used a grinder and wish I'd used the sieve with another grind. The speckled sugar looks like yours.
I haven't heard or read anything of the flavor profile of a developed vanilla sugar. How would you describe the taste and scent of vanilla sugar? Thank you!
After about 10 days it very much smells and take on the flavors of vanilla. I mix my sugar daily for that 10 days to make sure it mixes well. My clients love it and it makes great sugar cookies and cinnamon rolls.

NO I don't have a recipe for paste for one reason there is no real tested recipe for shelf life. All the recipes thrown out there for vanilla paste are just guessing on the shelf life. I am learning more and more about food safety every day and how to test for shelf life. Its not common for homemakers to test shelf life and I am trying to help others have abetter understanding of it. Do to the expense of the testers I have not purchased one yet but it is on my list soon to get one and developed recipes that are much safer or last longer.

My dehyrator is just a cheap Nesco. Can I use my freeze dryer?
Freeze drying will damage the flavors and not recommended. Your Nesco will work just fine as the vanilla beans do really need that much to dry out.

yeah i don't see why not. It would be interesting to see how they come out using the freeze drier. In fact it might be better using it trying to get it into a fine powder. Let me know if you try it.
Shaking the coffee grinder while grinding the vanilla beans will yield a more thorough grind.

Yes, could you scale down the recipe to a quart size yield as most of us will not be making half gallons. I don't have a dehydrator so can I dry my beans in the oven? If so then at what temperature for how long. I dislike the taste of coconut so besides vodka what other liquor can I use that matches the proof of the coconut rum so as not to get that harsh taste at the end that vodka will give me.

Yes the vanilla pod is a fiber that will not dissolve. So using vanilla sugar made with the dried pods will have bits a pieces in it like coffee grounds. Using in tea or coffee or any liquid drinks like I use it sometimes there will be chunks of it at the bottom . When using it in baking nobody ever notices it.
I don’t know if anyone has mentioned this, but what about some type of metal burr mill for grain I got a grain maker, 99 and was thinking about getting fresh beans and drying them out as best I can and running it through that and mixing it with powdered sugar. I really don’t wanna do a liquid extract right now, what I would like to achieve is some kind of sugar I can put in premade mixes that I sell through my cottage bakery. Like if I sell pancake mix or cookie mix I want to try to figure out what the right ratios are. I can just put the powdered sugar vanilla in there and that’ll be one less step somebody’s gotta take. I’d appreciate any ideas on that! Lol.
I have been wanting to test out some different mills for powdering the vanilla. The fine grain the better for sure. Having a vanilla sugar would work best for your application. A couple of things I have learned to maximize the vanilla is using the extract over straight vanilla beans. The flavors are trapped in the side of the vanilla beans and need to be pulled out to maximize flavor and profits. Example 1oz of vanilla makes 8 fluid oz of extract. That 8 fluid oz of extract will strongly flavor 10lbs of sugar. Now take that same 1oz of vanilla beans dry them out and grind them in to powder. You might be able to flavor 5-8lbs of sugar but you will have to mix this mixture on a regular basis in order the flavors to incorporate in to the sugar. With the vanilla being dry it will take longer and more labor involved.
I am using my spent beans drying them out only so I can grind them and then putting them in to sugar at a high ratio to get that aroma and flavor out of the sugar. But for me the spent vanilla beans are a by product of my extract. I still have to mix the sugar and vanilla powder daily for 10 days to achieve what I want. I am going to test new methods this year to maximize our efforts and flavors.
How did you get 10 half a gallon jars. From 10 cups of sugar. When you put 6 cups of the mixture in the first jar?But the clas was very intertaining.
It only showed me processing one batch using 1 cup of the ground vanilla beans. I had several cups of dried vanilla beans in the other tub to process. I just did not show processing all of it.

I always say you don't learn unless you try. This is how we grow by trying new things weather it is a success or a failure we have learned something. Sometimes buy trying something new we find great success. I try to some small batches and see if it works.

@@ClementFamilyFarms Actually, your past videos was the best I have seen on vanilla.
But the measurements of ratio of the FDA standard is still a lttle hard for me to understand. If a more simple explanation in everyday measurements for simple cooks like me could be awesome. . It's still confusing when they say 5-6 beans or some much ounces per cup.
Of all the vidoes I have seen, yours is the first I have found with a little science behind it and appreciate you sharing what you have learned.

How do you dry out your beans if you don’t have a dehydrator?
You can use your oven. I would turn the oven on to 350deg and preheat it. While it is coming to temp spread your beans out on a cookie sheet. Once it reach temp shut the oven off and put your bean inside and let the oven come back down to room temperature. Then crack the oven door and turn on the light. The light produces enough warmth to dry out the beans. This might take a day or two this way. Check your oven some now have a lower setting that gets down to 140 150 for dehydrating. I have never tried open air drying. I have heard of people drying them in the sun during the day and them bring them in the house at night in air tight container. That might work but I never have tried it my self.
I don’t have a dehydrator, but do have a freeze dryer. Would that work to dry the beans?
what is the sugar used for
I use it in place of white sugar when baking or for making tea or coffee.
Are the sugars ready immediately or do they have to sit for a bit?
I shake the bottles every day for 2 weeks then start using it. But really after a few days of shaking the sugar is ready to use.

Can you use the sugar right away ?
I usually shake my jars for about 10 to 12 days to get a good mix on them first and then start using them.
Do you let you beans dry a little bit after taking them out of the extract?
I use a dehydrator to dry the pods out after extraction.
I freeze dried my spent pods and the vanilla sugar turned out amazing!!
What beans did you use for this batch of vanilla sugar? I am trying dried whole beans in my sanding sugar.
I used Madagascar its about the only type of vanilla I buy now. Are you using fresh whole vanilla beans or are you using spent vanilla beans from extract? The reason I asked is I see so many people using fresh beans for sugar. It does make for good sugar but your only getting a little bit of the flavoring out of those vanilla pods. The rest of the flavoring has to be extracted. This is why I use spent beans after extracting because to get the same results but now I have extract and vanilla sugar out of the same vanilla bean.
@@ClementFamilyFarms they are "spent" ish. They were from my attempt at pressure cooking vanilla.
