When I'm marinating meat, I place it first in a ziplock bag, then add the marinade. It makes things a lot easier to handle and refrigerate, and also allows you to work the marinade in from the outside of the bag without getting the sauce all over your hands... Take care.

Last month, I bought two scotch bonnet plants from the local Home Depot. I see at least four mature looking peppers on it. I see jerk chicken on Monday, Memorial Day, a holiday in the USA. Thanks for the recipe!

In FL I lived by a guy and his family and they would grill homemade jerk chicken wings almost every weekend. He would rub the wings with mustard then add the marinade. Hope this tastes like his cause I have been missing those wings.

I remember going to a mom and pop restaurant in NY and ordered some salt fish and green bananas. I fell in love but failed miserable when trying to make it. Can you please make a video.
Easiest Caribbean dish to make . First wash and peel the green bananas use lime to preserve the green bananas to prevent it from turning colour. Put some water to boil throw like a pinch of salt in it and put in the green banana in. Boil the salt fish first throw out the water ,then use fresh water to wash it out. Drain the water out then separate the saltfish with ur hands. Btw check for salt don't over boil it to take out the flavor but just to reduce the salt a lil. Chop up peppers , garlic , onion , chives , celery leaves and parsley have a bit of fresh thyme also have black pepper and just a lil bit of curry like a teaspoon. Put the pan to heat up throw in a generous amount of oil put in ur chopped up onions etc. , when its a bit soft throw in the saltfish and add the rest of the seasoning. (Chopped tomatosbis also an option btw ) Saute everything up nicely make sure there's just enough sauce not too much but enough to wet up the bananas a lil bit. Make aure the bananas cooked it should be after about 20 mins or so (not too hard not too soft ) and voila there you go.
