Classic Chicken Marsala: A Creamy, Comforting Dinner That's Ready in 30 Minutes

- Today we will show you how to make Classic Chicken Marsala! You can use veal for this recipe as well. During this video, we emphasis the importance of using a quality Marsala wine for this recipe, which makes a difference in the taste of your sauce.
This Chicken Marsala recipe comes from our dad when he had his restaurant and it was a very popular dish. This recipe is easy to prepare with only a few ingredients, such as, chicken breast, olive oil. Garlic, butter, Portabella mushrooms, chicken stock, and of course, Marsala wine. We used Sperone Marsala, which is a product of Italy for this recipe. One of the best Marsala wines we have come across.

Ingredients:
• 3 Chicken Breast
• 2 TBSP of Shallots
• 1 cup of Marsala wine
• ½ cup of olive oil
• 5 TBSP of unsalted butter
• 1 pint of sliced Baby Portabellas
• 2 cups of chicken stock
• Salt & Pepper
• 2 TBSP of chopped Italian Parsley
Instructions:
1. Slice breast in half and pound them until they are thin.
2. Salt & pepper on each side of breast and then dredge in flour.
3. Heat pan on medium-high heat with olive oil and butter
4. Place the breast into pan and cook for 2 minutes on each side.
5. Remove breast and then add the Shallots - fry until translucent.
6. Add the baby portabellas and Marsala and let cook for 2 minutes.
7. Add the chicken broth, salt and pepper to taste- once it comes to a boil add the breast back into the pan and let cook for 2 minutes
8. Add Italian Parsley and Enjoy!

One of my all time favorite dishes to both eat, and cook... I absolutely love the taste of the Marsala wine! I was very fortunate to have known my great grandfather, and he lived in Cobble Hill. For lunch he would have a raw onion and a glass of Marsala wine. Lived to 96, gotta be a connection there, right?! As always, excellent job brothers!

6:32 in A beautiful ding! This friends is a classic and GREAT way to make Marsala - Chicken, Veal, Steak or even Veggie. Some restaurantuers leave the chicken in the pan with the Mushrooms and garlic the entire time some add some flour/broth mix. But this is #!

Why UNSALTED Butter? Is it a taste issue or a texture issue, etc?? BTW This looks fabulous! I have never eaten or prepared it bc of my dislike of mushrooms, but I am trying to incorporate more foods into my blah diet! I just have to cut them tiny so I won't think of them as mushrooms! People use it as a PR gimmick -"here, check out my food is comfy." Tell me a dish that is not a "comfort food". Can you do it?
