Mind blowing delicious!!!! I am so happy to have finally, after years of watching, gotten to taste the secret ingredient to a lot of your videos!!!
Glad you liked it. As a person that was deeply involved with Katchup Manis and Indonesian, I learned how to make from scratch. It's just brown sugar, star anise, garlic and soy sauce (4/5 to 1 ratio, sugar to soy) place on stove. Bring to a boil. Look for brown bubbles. Let cool. It will thicken. If to much, reheat and add water. As it cools it gets thick. Adjust to your taste. Remove star anise/garlic. Up to you 👍👍 Tip: If cooking. You can get away with how Asian cooking is done by adding sugar (brown/white) to dishes. Then add soy.
Just recently got my Napoleon Grill and can’t wait to try making chicken shawarma this way. I have always used a spike pan with a charcoal grill this wat looks better on the rotisserie

I made this today and would suggest halving the salt, using sour cream not the cream fresh and allowing (on a Napoleon rotisserie as shown) a good 1hr 50min until first carve. Then carve off every 10 to 15. This way you chase the cooked part nicely. For me this recipe is too salty and the cream fresh destroys the garlic mayo.
I followed the Ineos Genadiere as it was being developed, but sadly, its price is well above what I can spend on a vehicle, plus, I was disappointed to learn that they are not bringing the diesel to the USA.... OK, on to the tasty chicken!
What is the canned ingrediant for the sauce? It sounds like canned fresh and subtitles says canned fish. I know it's not canned fish. But I can't find canned fresh. Is this like yogurt?
For this particular recipe, you don't really need it. Score the chicken, add spice mixture and grill on charcoal - straight on the grate or on skewers. It works and you have full control. For the garlic "mayo" - it's normally served with toum, which is a bit lighter. fresher and healthier.

I usually wrap mine in aluminum foil for an hour to get the internal temperature up, and then unwrap it. Delicious !!!
