I live in NY, so whenever I bake, especially in the cooler months, I have to heat up the house first. And heat the stove. Or else the dough will take 10 hrs to rise :-(
Yes I have noticed the same thing. I usually just keep the dough in the oven with only the oven light turned on. The heat from the light really helps it. I know back home in Belize where it's hot the dough rises so fast on the counter top.

Yes the measurements would still be the same. The bead flour just gives it a bit of a higher rise.
