Essence of Emeril was the first show on the food network... for at least a couple of weeks, it was the only show. It played on a loop with a handful of infomercials. Just one episode the first week. Two episodes the second week, and so on. There were no gameshows on the food network.

Always loved watching Emeril. I believe the "chicken police" on his mind made him forget to season both sides of the thighs with salt and pepper. Emeril hates one side seasoned food LOL.

If you got New Orleans in your DNA, you know chicken thighs are the GOAT chicken meat. Bone-in, skin on is best for flavor, but the convenience of the cleaned thighs is cool too. Deeper flavor, juicier and cheaper than white meat chicken. I ALWAYS use thigh meat if I'm putting chicken in my gumbo, which is usually every time. Andouille, shrimp, thigh meat. BAM! 😋😂💪
