You can use exFat but normally its recommended to use FAT32 as apparently exFat runs into loading and technical issues but me personally I have stuck with exFat and have not run into any issues
Question: Does the Retroarch download come with all cores already? I do not want to connect my Switch to the Internet. I have got RetroArch for the Vita and I had to go online with my Vita to download the cores I needed in order to play my ROMS. So what is it like for the Switch?

unless you don't care about your switch getting bricked by nintendo you can follow any yt guides on how to do it, but be aware that by doing so you violate the agreement you made with nintendo and as soon as their software picks up on you using any software that isnt nintendo on your switch it will get bricked (possibly you account banned but i'm not sure about that one) when it comes to nintendo and their way of doing business, it's best to use a PC (or x86 chip based handheld) and emulate their games as it will be more safe, rather than risking expensive hardware or wasting money on their availability for retro gaming. Nintendo wont change their ways before customers stop supporting their ways.

Retroarch is a pain in the ass to configure on the Wii, but once you find out which roms go with which core your games will never crash. I have over 140 games for the FBA 2012 and MAME 2000 cores.
did you create the rom folder in your SD card from Mac? Try create the folder again from window OS. I read somewhere that switch do not read folder created from Mac. It works for me after i tried with window.
I would not recommend this as the homebrew version of retroarch is very buggy, provides noticeably less performance and does not provide emulation for gamecube and wii.

why can't you risk it? it's just a memory card. assuming it's an emoty card, you can probably just reformat it if something goes wrong.
