@@maremacd while I haven't tested it, I suspect the cake would work in a large loaf pan. Be sure to line it with parchment, and keep a close eye on it while baking (it will likely need to bake longer, depending on the depth of the batter). Keep me posted!
Its hard to cook gluten and egg free. I need to limit dairy and tomatoes as well. I get very I'll throw up and sick for days if I eat gluten. Eggs make me swell up like Im seven months pregnant and I can't breathe. Its hard they are sneaking eggs in everything now in ice cream and fudge as albumin powder which is eggs.
