I think a lot of people don't understand it when we say "poor people always pay more". It's because most of the time when you spend more up front, the more you save. However, some people might not be able to spend the $15 at once for the bigger pack of toilet paper and have to spend the $3 for only 4. Thanks to your videos because I do buy in bulk it really helps to actually use all that I buy.
Great video! An inexpensive, easy, but filling breakfast- take a half baked sweet potato, scoop out carefully, and mash up, with spices. I like pumpkin pie spice. Maybe a little butter. Refill the shell, and make a well in it that’s large enough for a full egg. Crack an egg into it, so it doesn’t over flow. Return to oven and bake. When I comes out I drizzle maple syrup on it, but I’m from Canada, and we put that stuff on everything! Lol

@@ArdentMichelle Maple syrup is definitely expensive, even if you're in the largest syrup producing region of the world, but you don't necessarily have to use a lot if you're just "drizzling" some.
Save all your veggie peels, stems, Onion and garlic peels and skins in a ziplock bag in the freezer. When you have a nice collection boil down into a nice mineral and vitamin rich broth on the cheap. Most skins and peels are nutrient dense.
Oh my gosh, the rice, is almost how my abuela makes. The only difference in her rice is that when she fried it she added onion and garlic and tomato paste them she cooked it in chicken broth. So when you started cooking my mouth started watering. Those tacos looked amazing. And Sopa!!!! So good!

I absolutely love sopa de fideo (or Caracol or de lettras- basically all the Mexican pasta shapes). My mother made it a bit differently. She'd blend up a Roma tomato and a quarter of a white onion with some Mexican oregano and the tomato bullion powder. She'd fry up the pasta and then fry up the sauce along with the pasta and add in water. I absolutely loved topping it with cheese, lemon, and tapatío. I also loved it when she'd add canned corn in the pot of soup. Some of the grownups added sliced cabbage on top of their soup.
I love your real life experiences doing the challenges. I'm restocking my shelves after moving from one state to another. I have a Winco very close to me as well as a Walmart. Definitely making my dollar go farther!

@@ArdentMichelle when I was there last week I was surprised at how much eggs have gone up! I moved to the Fresno area last summer after living in Arizona for more than 25 years. When I lived in Arizona I had chickens and it was fun to raise them. The quality of eggs was better but it wasn't cheaper than buying them at the store. But as soon as I am able to have chickens again I will definitely have between 8 and 12 birds so that I can have really good eggs again. It's completely worth the price!
Thank you for all your budget challenge videos, but I thank you even more for showing $1 a day challenges. We personally choose to eat this way, hoping that others also figure out how to stop the convenience food budget drain. Every dollar spent on a convenience item is a dollar that could be spent paying down debt and saving for emergencies. For us, the key to a healthy and tasty $1 a day food budget per person starts with buying seeds to grow something, year-round, indoors and out. A windowsill filled with containers growing green onions, celery, herbs, spinach, kale, and collard greens is a low-cost way to make the carefully curated pantry stretch further. I no longer buy food in retail stores. I look for loss leaders and buy basic food in bulk, online or at a local Mennonite store. Then we practice zero-waste principals in the kitchen and avoid any food that is part of the industrialized supply chain (wheat, corn, soy, canola, HFCS, etc). The industrialization of agriculture was supposed to cost us less, but it didn't work out that way.

True, use the stems of both cilantro & parsley. Use the lovely green leaves when You buy celery. What doesn’t go into our meals here goes to freezer for making stock, goes to Pups or hens as treat or goes into compost tumbler. Use it or loose it.

This is a really great way to do the challenge because it’s very true to life as if you buy a bag of rice, you don’t only eat a ,portion and throw the rest out. Very enjoyable.

I just had fideo yesterday. We top it with queso fresco and eat it along with boiled eggs. My mom will sometimes add cut up potatoes for the soup while it’s cooking to help bulk it up.
I grew up eating fideo and still enjoy it today. I've used spaghetti broken up to smaller pieces, angel hair pasta, I've even used a box of mac and cheese elbows and sprinkled the cheese powder on top at the end. You can use any pasta you have on hand. The key is making sure to toast the pasta till its golden before you add water and tomato sauce to get that amazing al dente texture and toasty taste. You can add left over meat like ground beef or chicken. I usually prepare with a can or two of tomato sauce, water, garlic powder, pepper, chicken bouillon and a bit of butter mixed in at the end. I'll have to give your recipe with beans and tomato seasoning a try! Thanks for sharing!

I have had a problem keeping cilantro fresh. I will try an experiment & keep 1/2 in a food keeper & 1/2 in water & see which works best. I might also buy some dried cilantro.
Great video. Just wanted to say that when frying tortillas, You really don’t require a lot or any oil. Some ppl on a limited budget don’t use paper towel as it can be very expensive in some areas.
This is true. 👍The traditional way is without oil, but I like to fry them a little to make them chewy but you make a good point for those that can't afford the oil.
We love mexican food. Loved these recipes! With the price of meats I have been using more eggs. I'm making the breakfast eggs for dinner. Sounds sooo good!
I grew up with sopa de fideos. My favorite was when we put queso fresco and avocado on top with some zucchini and potatoes cooked with the noodles. We always added beans and if we had leftover meat from previous meals we would add it too. Very versatile sopa

I grew up with Fideo. There are lots of variations. I add a can of charro beans to boost flavor and satiety. It can be made with anything really, beans, chicken, steak, ground beef, etc.

Cook ground beef, onion, carrots and potatoes together to make a picadillo, then add to your soup. For extra flavor blend tomatoes, garlic and onion to liquify and add to browned fideo. It makes a complete meal🥰 You can also top with cilantro, diced tomato, onion, crema and avocado 🥑 Best to you and your family🙏

Wonderful video! So simple yet delicious and creative. We live in northern New England now and we have to pay outrageous prices for produce most of the time, so I grow a garden. I sure do miss the west coast veggies, but we still manage to eat well for much less than most people we know. Thank you for the inspiration, I’ll be making the sopa on my next day off!

The tomatoe bullion is flavorful . I've made Mexican rice with just this and rice( water too )😊 in my rice cooker. Not even used fat or any additional ingredients. Turns out great.

I'm Puerto Rican, mom's fideo soup would consist of pieces of corn on the cob, chunks of boneless, skinless chicken thighs, some rice and once completed, pieces of avocado in the soup.....it's so good.....we didnt have that tomato seasoning, she would make her own soup base, we call sofrito, then she'd add tomato paste and tomato sauce....hmm, I think I'm going to make some this weekend, but I'll he on the look out for that tomato seasoning
I love cilantro stems...they have more flavour than the leaves. We don't have a lot of Hispanic food choices in my country but the recipes look delicious.

sodas. Your fideo soup, add a little onion while browning pasta, then blend the tomatoes instead and add so that it sizzles. This gives it great flavor, then add water and chick bouillon. I also add some veggies, potatoes or carrots or zucchini...or all 3 when I have all.
I have done this challenge on paper with £1 about a year ago and managed to run in just under budget when planning for 7 days. This included desert for lunch and dinner. This system of calculating is so obvious I don’t know why I haven’t seen it done before. It provides more variety and less repetition along with some less bizarre failures. We don’t eat a lot of dried beans in the U.K. but I do utilise pancakes in my menus.

I grew up and lived most of my life in Southern California. Greatly miss all the international markets with their huge variety of produce and it being so inexpensive. I've lived on the east coast and am now in WA state, have never seen such low prices again.
I do feel blessed and I still have so many markets nearby that I haven't been to yet. Are there any ethnic markets nearby? I know there are some Winco's in some areas of Washington.
I can totally relate! We moved from the Puget Sound area to northern Vermont. Never, ever have paid so much for dairy, veggies and groceries in general. Whenever we visited California I was so impressed with the prices of fresh fruit and veg. Videos like Michelle’s are even more important in light of the crazy prices we have here.

I've been leaning toward a Mediterranean diet but I well definitely increase the Hispanic flavors in my cooking after seeing this! Thank heavens I dont have to budget like this, and adding a drizzle of olive oil or an avocado would add healthy fat to keep you full longer as well if you can afford it. So nicely done!
I appreciate the effort you put into your videos. I found the tomato bouillon at a local south American grocery. I tried the fideo soup. It was a nice change from heavy, creamy soups. I will definitely use that bouillon again. I love adding new, tasty ingredients to my pantry. It is a plus when they are easy on the budget. Your breakfast tacos are going on my menu. Sopa de fideo or any small pasta soup with hard boiled egg, sour cream and cheese. You can also add some ground beef, shredded chicken or chopped up Potatoes or beans. So many things that you can add to the "sopita" and very inexpensive. We eat our soup with a side of quesadillas. Love your videos

I do not think cilantro 🌿 would freeze well. I wonder if the stems would freeze well for when I am out of the fresh!?!! I will try next time I buy some.
I bought some of that tomato chicken broth, made some chicken soup but my hubby can’t have salt and doesn’t like tomatoes. Wow did a little of that broth added to my soup made it sing!! Thank you, I had never heard of it.
In your sopa de fideo you can use the same method and add potatoes, carrots, shredded chicken, beans, corn. Pick one or all. It's one of our go to meals. If you have ground cumin, you can add a little as well. Maybe 1/4 tsp or so. Not much, since you cook in small batches. Love the video, btw. Keep up the great work 👍

Sorry need to finish. Similar ingredients. Tomatoes, onion, cilantro, chicken broth combined in blender. Cook slightly. Brown fideos in oil & add to broth. I LOVE this simple soup!

My husband is from Mexico & he has me fix this or rice with every meal. But is he or our daughter is sick he always has me cook fideo soup. He said it's there chicken noodle soup. But I cook it very differently. I didn't even know you could get tomato consume. This year we will be married 20 years in March. This is how I cook it when any of our family is sick. In a blender cup I add 4 Roma tomatoes washed & cored 2 cloves of garlic 1/4 a small onion 2 Tbsp chicken consume 1 cup water Salt & Pepper, to taste. Then slarting on low I start the blender. Once it blends smoother I increase the spread to high & I blend it until smooth & frothy. While it blends I peel 3 Potatoes then I wash & dice them. Once they are clean, I add the diced potatoes in a bowl & cover them with water & set them aside. I let them sit covered in water until I need them. This does 3 things. 1. It pulls out excess Starch & 2. Keeps them crisp & 3. They won't turn brown. Now let's cook. In a large pot, add 2 to 3 Tbs of vegetable oil & heat over Med high heat. Once hot add an entire package of Fideo pasta. Moving the pasta constantly until a light golden brown. Once brown pour the pureed mixture from the blender cup into the pot. I add 2 to 3 Cups of water, 1.5 Tbsp of chicken consume, & salt & pepper to taste. Bring to a low simmer & check the seasoning. (Remember you will be adding in the Raw, Diced, potatoes next. So it will need extra seasoning.) Next drain the water off the diced potatoes & add them to the soup. Let them come to a low boil & reduce your heat & cook 5 or 6 minutes. Check your salt & pepper. Add water, salt, & pepper to your pot as needed. This is supposed to be a soup so as water cook out add more. When you can stick a fork easily threw your potatoes check water level & seasoning 1 last time. When you have water & seasoning where you want it, cook on medium heat until you potatoes almost fall apart when touched & the pasta is very tender. To go with you soup make mozzarella quesadillas. The way we make these is I ise my t-fal griddle. I like flower tortillas but my husband & daughter like corn tortillas. Add you tortillas to a dry pan on Medium heat. I leave them on the one side until piping hot but not brown. Then I flip them. Next few steps need to happen quickly. I add shredded mozzerella to half of the tortilla & then I fold the tortilla in half like it was an omelet. I leave it on each side only a few minutes using a spatula to flip it one side & them the other side. I cook the quesadillas until the cheese has melted & the outside is slightly brown. My husband calls it their chicken noodle soup. I think it's more like their version of tomato soup & grilled cheese sandwiches. I don't know what is the best thing to call it except delicious. Give it a shot. I hope you. Enjoy it. Yum!

I want these stores in Maine. Gas is 375 a gallon. I pay 4 dollars for Maine potatoes. New England is rough. I couldn't do this. I make soups and freeze everything. Trust come to Maine never

I used the fideo noodles with minute rice to make "homemade" rice a roni. Just add chicken bouillon cubes and Italian seasoning.
And if you have turmeric on hand, add a little of that for coloring.

I just had fideo yesterday. We top it with queso fresco and eat it along with boiled eggs. My mom will sometimes add cut up potatoes for the soup while it’s cooking to help bulk it up.

I grew up eating fideo and still enjoy it today. I've used spaghetti broken up to smaller pieces, angel hair pasta, I've even used a box of mac and cheese elbows and sprinkled the cheese powder on top at the end. You can use any pasta you have on hand. The key is making sure to toast the pasta till its golden before you add water and tomato sauce to get that amazing al dente texture and toasty taste. You can add left over meat like ground beef or chicken. I usually prepare with a can or two of tomato sauce, water, garlic powder, pepper, chicken bouillon and a bit of butter mixed in at the end. I'll have to give your recipe with beans and tomato seasoning a try! Thanks for sharing!

I have had a problem keeping cilantro fresh. I will try an experiment & keep 1/2 in a food keeper & 1/2 in water & see which works best. I might also buy some dried cilantro.
Great video. Just wanted to say that when frying tortillas, You really don’t require a lot or any oil. Some ppl on a limited budget don’t use paper towel as it can be very expensive in some areas.

I grew up with sopa de fideos. My favorite was when we put queso fresco and avocado on top with some zucchini and potatoes cooked with the noodles. We always added beans and if we had leftover meat from previous meals we would add it too. Very versatile sopa

I grew up with Fideo. There are lots of variations. I add a can of charro beans to boost flavor and satiety. It can be made with anything really, beans, chicken, steak, ground beef, etc.

Cook ground beef, onion, carrots and potatoes together to make a picadillo, then add to your soup. For extra flavor blend tomatoes, garlic and onion to liquify and add to browned fideo. Wonderful video! So simple yet delicious and creative. We live in northern New England now and we have to pay outrageous prices for produce most of the time, so I grow a garden. I'm Puerto Rican, mom's fideo soup would consist of pieces of corn on the cob, chunks of boneless, skinless chicken thighs, some rice and once completed, pieces of avocado in the soup.....it's so good.....we didnt have that tomato seasoning, she would make her own soup base, we call sofrito, then she'd add tomato paste and tomato sauce....hmm, I think I'm going to make some this weekend, but I'll he on the look out for that tomato seasoning

sodas. Your fideo soup, add a little onion while browning pasta, then blend the tomatoes instead and add so that it sizzles. This gives it great flavor, then add water and chick bouillon. I also add some veggies, potatoes or carrots or zucchini...or all 3 when I have all.

I have done this challenge on paper with £1 about a year ago and managed to run in just under budget when planning for 7 days. This included desert for lunch and dinner. This system of calculating is so obvious I don’t know why I haven’t seen it done before. It provides more variety and less repetition along with some less bizarre failures. We don’t eat a lot of dried beans in the U.K. but I do utilise pancakes in my menus.
It was very time consuming to do all the calculations for the video. ☹️ But it does make sense in every day life.
Been wanting to make this soup forever. Motivation is now here! 😋

I grew up and lived most of my life in Southern California. Greatly miss all the international markets with their huge variety of produce and it being so inexpensive. I've lived on the east coast and am now in WA state, have never seen such low prices again.
I do feel blessed and I still have so many markets nearby that I haven't been to yet. Are there any ethnic markets nearby? I know there are some Winco's in some areas of Washington.
I can totally relate! We moved from the Puget Sound area to northern Vermont. Never, ever have paid so much for dairy, veggies and groceries in general. Whenever we visited California I was so impressed with the prices of fresh fruit and veg. Videos like Michelle’s are even more important in light of the crazy prices we have here.

I've been leaning toward a Mediterranean diet but I well definitely increase the Hispanic flavors in my cooking after seeing this! Thank heavens I dont have to budget like this, and adding a drizzle of olive oil or an avocado would add healthy fat to keep you full longer as well if you can afford it. So nicely done!

I appreciate the effort you put into your videos. I found the tomato bouillon at a local south American grocery. I tried the fideo soup. It was a nice change from heavy, creamy soups. I will definitely use that bouillon again. I love adding new, tasty ingredients to my pantry. It is a plus when they are easy on the budget. Your breakfast tacos are going on my menu. Sopa de fideo or any small pasta soup with hard boiled egg, sour cream and cheese. You can also add some ground beef, shredded chicken or chopped up Potatoes or beans. So many things that you can add to the "sopita" and very inexpensive. We eat our soup with a side of quesadillas.

With the sopa de fideo I add taquitos de papa or potatoes. Even if you use one your good for few taquitos to be more full. So good

In your sopa de fideo you can use the same method and add potatoes, carrots, shredded chicken, beans, corn. Pick one or all. It's one of our go to meals. If you have ground cumin, you can add a little as well. Maybe 1/4 tsp or so. Not much, since you cook in small batches. Love the video, btw. Keep up the great work 👍

My husband is from Mexico & he has me fix this or rice with every meal. But is he or our daughter is sick he always has me cook fideo soup. He said it's there chicken noodle soup. But I cook it very differently. I didn't even know you could get tomato consume. This year we will be married 20 years in March.
This is how I cook it when any of our family is sick.
In a blender cup I add
4 Roma tomatoes washed & cored
2 cloves of garlic
1/4 a small onion
2 Tbsp chicken consume
1 cup water
Salt & Pepper, to taste.
Then slarting on low I start the blender. Once it blends smoother I increase the spread to high & I blend it until smooth & frothy.
While it blends
I peel 3 Potatoes then I wash & dice them. Once they are clean, I add the diced potatoes in a bowl & cover them with water & set them aside. I let them sit covered in water until I need them. This does 3 things. 1. It pulls out excess Starch & 2. Keeps them crisp & 3. They won't turn brown.
Now let's cook.
In a large pot, add 2 to 3 Tbs of vegetable oil & heat over Med high heat. Once hot add an entire package of Fideo pasta. Moving the pasta constantly until a light golden brown. Once brown pour the pureed mixture from the blender cup into the pot. I add 2 to 3 Cups of water, 1.5 Tbsp of chicken consume, & salt & pepper to taste. Bring to a low simmer & check the seasoning. (Remember you will be adding in the Raw, Diced, potatoes next. So it will need extra seasoning.) Next drain the water off the diced potatoes & add them to the soup. Let them come to a low boil & reduce your heat & cook 5 or 6 minutes. Check your salt & pepper. Add water, salt, & pepper to your pot as needed. This is supposed to be a soup so as water cook out add more. When you can stick a fork easily threw your potatoes check water level & seasoning 1 last time. When you have water & seasoning where you want it, cook on medium heat until you potatoes almost fall apart when touched & the pasta is very tender.
To go with you soup make mozzarella quesadillas. The way we make these is I ise my t-fal griddle. I like flower tortillas but my husband & daughter like corn tortillas.
Add you tortillas to a dry pan on Medium heat. I leave them on the one side until piping hot but not brown. Then I flip them. Next few steps need to happen quickly. I add shredded mozzerella to half of the tortilla & then I fold the tortilla in half like it was an omelet. I leave it on each side only a few minutes using a spatula to flip it one side & them the other side. I cook the quesadillas until the cheese has melted & the outside is slightly brown.
My husband calls it their chicken noodle soup. I think it's more like their version of tomato soup & grilled cheese sandwiches. I don't know what is the best thing to call it except delicious. Give it a shot. I hope you. Enjoy it. Yum!

I want these stores in Maine. Gas is 375 a gallon. I pay 4 dollars for Maine potatoes. New England is rough. I couldn't do this. I make soups and freeze everything. Trust come to Maine never
