I can't believe you only got a couple of views, & comments, for this well explained recipe. Anyways, I truly appreciate your hard work. Especially, for a beginner like me. I can't wait to make this.
Solid receiple few things I would change. - Replace the oil with lard - Increase the amount of corn starch - Press the chicken into the breading mix after coating it
Ever thought of throwing the chicken breast in the oven immediately for a few minutes after coating it? It helps the flavor permeate into the breading.
I didn’t end up airfrying it because you’re not supposed to put wet batter in the air fryers. I would try making a “batter” with flour, baking powder (maybe breadcrumbs too), and a lil bit of oil. Tossing the chicken in that then airfrying it. I’ll do that when I make wings and they come out crispy enough, but I haven’t tried it with chicken breasts/thighs yet
Hey, I live up the street from the Pasadena Main hot chucken...had it once and its really good but I wanna make my own because they are pretty expensive to feed a family
nice recipe, but not as close to the original. this is how i made it (and it tasted close to dave's hot without some of the extra ingredients here): marinade: buttermilk, pickle juice, louisiana hot sauce (similar portions to here) chicken: leave it in the buttermilk inside the fridge for a few hours. i left mine for 6 atleast but also did one that was overnight, both good. flour mixture: flour, paprika, onion powder, garlic powder, sea salt, black pepper (use judgement) spice mixture (dry): ghost pepper powder (1 tblspn if u dare/skip otherwise, no problem) smoked paprika (3 tblspn), cayenne (2 tblspn), garlic powder (2 tsp), onion powder (1.5 tsp), sea salt (1 tsp) (or similar ratios) spice oil (same technique used here): take one tblspoon of the dry mixture, 2-3 tsp of brown sugar (real stuff) and pour in hot oil (when it's time) (and i also put some louisiana hot sauce in it but u don't need it if u don't have it already) dave's secret sauce: Mayo, chipotle sauce (u can use tabasco's chipotle sauce), honey + sugar (adjust as needed) and that's it. cooking: take chicken out of the marinade, coat it in the flour mixture, dust off extra, and fry in oil around 355-360 degrees fahrenheit. take some of that oil out to make the oily spice mixture. but yeah that's it, i didn't use baking soda/powder and some of the other stuff here. it was just as crispy and delicious. :)

nice recipe, but not as close to the original. this is how i made it (and it tasted close to dave's hot without some of the extra ingredients here):
marinade: buttermilk, pickle juice, louisiana hot sauce (similar portions to here)
chicken: leave it in the buttermilk inside the fridge for a few hours. i left mine for 6 atleast but also did one that was overnight, both good.

spice mixture (dry): ghost pepper powder (1 tblspn if u dare/skip otherwise, no problem) smoked paprika (3 tblspn), cayenne (2 tblspn), garlic powder (2 tsp), onion powder (1.5 tsp), sea salt (1 tsp) (or similar ratios)
spice oil (same technique used here): take one tblspoon of the dry mixture, 2-3 tsp of brown sugar (real stuff) and pour in hot oil (when it's time) (and i also put some louisiana hot sauce in it but u don't need it if u don't have it already)
dave's secret sauce: Mayo, chipotle sauce (u can use tabasco's chipotle sauce), honey + sugar (adjust as needed) and that's it.
