- Murg Malai Kabab are irresistible tender succulent and fragrant pieces of chicken that melts in your mouth as they are marinated in thick yogurt, cream/malai, cheese, saffron, herbs & spices which adds an nice creaminess to the kababs.

Ingredients
1 pinch cardamom pdr
2 tbsp cheese
1 lbs chicken breast
1 springs coriander leaves
1 tbsp corn flour
1 tbsp cream
1 tbsp curd thick
1 tsp ginger garlic paste
1 number gr chilli
1/4 tsp meat tenderizer ,or raw papaya paste
1 tbsp oil
1 pinch pepper pdr
1 pinch salt
Directions
• cut chicken breast to bite size pieces and dry them with paper towel and marinate with pepper pdr , tenderizer and squeezed ginger garlic paste and keep in fridge for 30 min before adding to other marination
• second step is to make marination by making paste of mozzarella cheese or using mascarpone cheese , add curd ( thick ) or sour cream , cream corn flour ,chilli and coriander paste,salt ,oil,cardamom pdr and mix well
• marinate the chicken with this marination and put in the fridge for another hr
• put on to skewer and put in the hottest possible setting on your oven ,if possibe on broilmodr and cook for 10 min on each side till you see fine color on the kabab
• serve hot with sprinkled chat masala and lime juice

I found this recipe about 13 years ago and still is my goto recipe for malai chicken. The marinate is great even for shrimp. Ever single time I bring this to a party all the chicken is gone and I always get people asking for recipe. This is a 5 star recipe. I have even used left over marinade to marinate onions and bell peppers and throw them on the grill and they all taste great
This man does really inspire others to cook. Its not just about the ingredients and technicality of the cooking which are there in most other cooking shows. The factor that set him apart is his visibly and audibly unabashed passion about the dishes he cooks on the show and the explanation of the reasons behind some of the steps...... I always liked cooking but found cooking shows too drab to sit through. And then found Vahrehvah. Keep it up chef and continue to transfer the passion exactly the way you do it now. Its contagious. :)

You mention saffron in the description but it's not listed in the ingredients.

Vahchef - I made this tonight and it was amazing! Couldn't believe my kids ate it and loved it (maybe it was your dance that they loved?) They normally don't go for this but my husband and I love Indian cooking. You've given us hope on the home front!

Excellent recipe and unparalleled description as usual. Wanted to make chicken reshmi kebab for the first time. Looked at several places. Finally remembered you, and found this. I didn't have tenderizer or papaya, but still it turned out soooo delicious. Its one of the best i have had in a long time. I didn't even use the oven. Just used a non-stick tawa, to get it done quickly.

Thank you very much chef, for your passion and patience...I often see some comments on your accent but nevertheless for one such a comment (which is stupid anyway) you have thousands and thousands of thankfull people behind you! I am a bad cook and I have to admit I am a receiver not a giver here but I tried this yesterday (apart from Chad Masala) and it turns out to be unbelievable good.alongside which some German bread as I am from there it is fantastic!!

Can I use papaya pineapple juice instead of meat tenderizer
I'm confused about the baking and broiling. Can we place it in the pre heated oven for 25 minutes and at the same time can we press broil option? I never tried the broil . Usually I bake them. Please help
