- These can literally be adapted to any flavour you like. i.e: Add lemon extract & zest to the batter and replace jam with lemon curd for lemon flavour.
Super easy to make. If cutting the top is difficult for you then you could just peel the cupcakes out of their cases and cut them in half instead.
Tips: Use Muffin Tray and Muffin liners for best results. Also turn the fan off in your fan assisted oven if you can. Make sure your margarine, eggs and milk are room temp.
Oven Temp: 170c no fan / gas mark 3.5
Bake time: 17 mins
Ingredients:
For cupcakes:
-200g margarine (I use stork)
-200g sugar (granulated or caster both are fine)
-3 medium eggs
-1tsp vanilla extract
-200g self raising flour
-1tsp baking powder
-50ml milk
For cream:
-200ml double cream
-15g icing sugar
-2/3 tsp vanilla extract
For serving:
-60g jam
-6 strawberries (halved)
-dusting of icing sugar
