JAM BARS with hidden beans!

  • Today I want to share my super healthy and weight loss friendly version of jam bars!
    Full of oats, beans and sweetened with fruit - this recipe is whole foods and low calorie density. This is perfect for breakfast on the go or pudding!
    Jam:
    350g frozen blueberries
    1 tsp vanilla
    1 tsp lemon juice
    1 tbsp chia seeds
    Base:
    1 cup chickpeas
    3 medjool dates
    2 tbsp peanut butter powder (optional)
    1 cup oat flour
    1 tsp vanilla
    1 tsp baking powder
    3 ripe bananas, mashed
    1 cup rolled oats
    Defrost your blueberries and mash with remaining jam ingredients. Set aside for 10-15mins to thicken.
    In a food processor blitz up chickpeas and dates. Then add in peanut butter powder, oat flour, vanilla and baking powder. Add this mix into a blow with mashed bananas and rolled oats.
    Flatten in an oven safe dish (saving 1/2 cup of mixture for the crumble on top). Add your jam and crumble on top.
    Bake at 180 degrees Celsius for 30mins. Let it cool and slice it up!

    Pro tip! Crumble the parchment and run it under water. Squeeze out the water. Unfold and shake out excess water. Now you can easily fold and shape it into a dish!

      I don't even use the water. I just crumple and then spread in the pan.

    I learned if you wet the parchment paper you can then mold it easier in the basking dish!

      Also works to crumple parchment into a tight ball then smooth out and it becomes much easier to conform to whatever shape you’re going for.

    Ami, thank you! I too am on a weight loss journey. I was diagnosed with pre-diabetes in late 2019-2020. Along with that came three medications, and one weekly injection. My doctors, plural as my pc has changed since the diagnosis, have said to simply take these medications, be more active, and you’ll be fine. In three years, I’ve managed to loose 15 pounds. I keep asking them what else to do. The response is always “everything in moderation.” That’s the furthest thing from helpful. I too am an eater, mass quantities, stress and emotional. This video, honestly gives me hope as becoming vegan has been something that’s run around my mind for years now, well before the diagnosis, too. Thank you for the courage, and inspiration.

      A whole food plant based diet with no salt, oil or sugar (SOS), is excellent for diabetes but you should ask your doctor for a referral to a dietician. If you're taking injections and medications, a good diet is so effective at getting your blood glucose into a tight range at some point you'll likely need to reduce the medications with advice from your doctor.

      Doctors often don't know anything about the right nutrition. I hate working out, and I lost 22 pounds without working out, over the last 3 years.
      Listen to Dr. MCdougall and Chef AJ too, so you have better idea how to lose weight healthy and without dieting.
      Ami's recipes are great too.
      I started to follow Dr.McDougall 3 years ago during pandemic, when I was diagnosed with very high cholesterol, despite my good BMI.

    Ami, can you make an oil-free Mexican Mole sauce (with or without chickpeas?) I love this type of sauce and can eat it the way you were eating that jam bar batter! haha. It is addictive since Mole sauce contains chocolate. Would so love for you to figure this one out for me! Thanks for the Jam Bar recipe! Looks incredible and I'll definitely be making that one!❤

    Ami, if you wet the parchment paper and wrinkle it up and then it will fit into your pan better and won't move.

      u don't need to wet it. just scrunch it up then flatten it out.

    I really enjoy your videos, especially the ones like this one that demonstrates one recipe at a time (rather than several in one video). It's just me but it helps me to save it under categories (i.e. desserts, dinner, etc) and easier to locate when ready to make. These jam bars look amazing!

      If you have flax seeds you can use this instead of chia

    I made these and they are perfect! What an amazingly simple and healthy recipe! Thank you! I had some white beans that needed to be used so that's what I put in my jam bars! I didn't use parchment paper in my glass dish and they did not stick!

    I just tried these, so good! I added some vanilla protein powder (1/ 3 cup) and subtracted that on the flour. I will be making these again for sure, I might use fewer dates as I found the bars quite sweet. Great recipe, thank you!

      I think Dr. McDougall doesn't recommend protein powders. But you would need to double check.

    Chickpea Anzac biscuits?
    These jam bars are delicious! The bananas I used were huge so I threw in an extra 1/2 oat flour, they came out perfect!

      That would be awesome but remember you can't legally call them Anzac biscuits unless you use a traditional recipe www.dva.gov.au/sites/default/files/files/about%20dva/recognition/guidelines-use-of-the-word-anzac.pdf
      Something with chickpeas would be so much healthier.

    Chia seeds are pretty high in fat. The jam bars look absolutely delicious. I will try the recipe, but I’m going to use tapioca starch instead of Chia seeds in the jam. I think that will work well.

    If you crunch up your parchment paper before flattening it in the pan, it stays put much better

    Please read the ingredients of what you're using , P&b has coconut palmsugar in it, so your recipe is not sugar free unfortunately . Looks great though

    I am a little disappointed when I made this recipe. The bars came out cake like and not a crunchy bit in the lot . It has a nice taste even with no sugar so there's that. Also I had to add extra chia seeds to my blueberry topping in order to get them to thicken up. I baked for 30 minutes but perhaps longer would have been better? Or a hotter than 350°f. I may attempt them again later and tweak the temp/time.
