It's possible that whatever TAS you're trying to run has a desync. Maybe it was written for an older patch of the game. Everything on the github should be up to date, so that might be a question for the celeste discord.
It's been a while since I touched Celeste, but as far as I'm aware, the keybinds you set in game / in the tools are completely independent from the playback. If the tas manages to start but desync partway through it's probably not a keybind issue. If you're sure you have the most up-to-date level files and game version, then the best bet is probably to ask around #tas-general on the Celeste discord and see if someone there knows what's up.
At 5:32 you show a default path setting, but using your method I can't find it, atleast for the most recent version of CelesteTAS
