I've been using maple syrup in my sweet potato casserole for years and I make the same topping except i use pecans which our family loves. It's always a hit.
I think adding chorizo would be a nice addition to the twice baked sweet pots!
You complained that sweet potatoes are too sweet. I like that on occasion such as just eating a baked sweet potato by itself (I learned it from China when I ate it as a street food snack// just bake and add nothing to it). But then you go on to demonstrate how one can make sweet potatoes that aren’t as sweet by adding other ingredients. This is why I’ve grown to love sweet potatoes- versatile and delicious. My favorite is to cut the sweet potatoes into small chunks (1/2” cubes?), dress then in oil, add savory seasoning (salt, black pepper, spicy pepper, and maybe cumin or curry or etc). It’s a great side dish!
Agree! We love to make sweet potatoe fries. Cut in strips and then just oil, salt, pepper and bake in the oven.

The addition of lemon juice is key. Learned this years ago. Have never used the peel, though and am wondering...The addition of the pistachios was lovely. I have made sweet potato muffins and waffles. Really moist and great throughout the year. Only needs a touch of butter in either case.

I am not a sweet potato fan, but years back I experimented with using a 50/50 ratio of sweet potatoes/butternut squash and this is now my go to for any recipe that calls for sweet potatoes. Look forward to trying it with your recipes. 😋😋😋

PS: in most Canadian supermarkets, sweet potatoes are called 'yams'.

I often fool my stepson and hubby when I make “Stoemp” mashed potatoes w/ any vegetable: spinach, leeks, carrots, broccoli, you name it… but back to the fooling part of my comment: my stepson is a very picky eater, he always argues when he has to try a new food, but he does love carrots so instead of carrots I often make my so called “Carrot Stoemp” by using sweet potatoes instead 😂 neither he or my hubby notice the difference (thankfully my stepson can’t see what’s going through my mind at that time: FOOLED AGAIN YOU JUST ATE A VEGETABLE YOU DON’T KNOW AND WHICH YOU SWEAR NOT TO LIKE - YOU JUST ATE 2 LARGE PORTIONS LITTLE GUY) ❤

Do you buy cayenne in bulk?
Unless you're cooking in bulk, for a restaurant or other kind of industrial kitchen, buying spices in bulk is terrible. It loses flavor before you get anywhere close to done with it.
@@KomboEzaliTe It was really just a joke that he puts cayenne in EVERYTHING. I watch another person who is Scottish and they eat a lot of potatoes. Almost everyday. If they have them less than five days I'm shocked. They could both be drinking games if I drank.
@@mondoraj I'm confused and concerned. Potatos are one of the most versatile and useful foodstuffs ever and cayenne goes well with anything that isn't minty. Why are you surprised people enjoy them?

Twice baked sweet potato?
I like bacon and onion in baked white potatoes but not in sweet potatoes for me. I like them baked really well to caramelize the sugars. I like brown sugar and butter and marshmallow on my sweet potatoes.

Hey everybody, I could use some recommendations for sweet potato recipes. I have a huge bushel of sweet potatoes and I just don’t like this vegetable! Is there anybody out there that also doesn’t like them but has one recipe that makes them delicious to you? I’ve tried a few recipes that seemed good, but I wasn’t that happy with them. I figure if a recipe wins over a sweet tater hater then it might win me over. So… yeah, that’s it.

I love mine just baked and either sliced with butter and s&p, or mashed (if cooked enough) with the same. My mom has found a delicious way to cook it until it is still firm, and then slice and sautee in butter. THAT'S delicious!
I never knew I loved sweet potatoes until a few years ago, b/c I don't like all the nasty ubiquitous Thanksgiving casseroles with all the sweet shit on top.
I've also been making them into a hash with onion and broccoli, sometimes add some sausage. And just plain taters and onions... just using sweet potatoes instead of white.
Here's an easy one: cut up the sweet potatoes into slices, put in a covered container. Sprinkle with oil to cover and toss with the lid on. Open again and sprinkle some dried onion soup mix, close and toss. Put on a baking dish and heat in 375°oven, about 20 min.
Or, chop, boil and mash some, then put in some crushed pineapple and mash again. Nice side. Or do that and throw a crumb crust on top and heat in oven.
I would have sub sorghum syrup for the maple syrup since I hate anything maple flavored. I do not like maple syrup.

I wouldn't use cayenne the same way I use pepper
I have heard adding a tiny amount of cayenne or crushed red pepper is sort of a culinary trick to wake up taste buds and improve the other flavors. Like salt with chocolate.

I would think a chef would know the difference between sweet potatoes and yams, which these are. I know it’s a common misnomer, but sweet potatoes are a lot like white ones, but slightly pink and a bit sweet.
