      Josh Anderson I make eggs Benedict all the time hollandaise sauce is very hard to make

    Why strain it I would eat the whole thing

      I never said that anyone had to strain it.
      On the other hand, I think that demonstrating that the mushroom sauce can have a slightly better presentation on the plate by straining it - is worth noting. And yes, if I was making this at home for family etc. I may not see the need for straining it, depending on what I was using it for.
