Just made this yam cake. It was a success. I pan fried the yam instead and added mushroom. Yam cake need to be cooled thoroughly before cutting. You cannot eat it if just cooked, maybe that’s why some commented it is too soft?

Different method from my mum's yam cake. My mum cuts the yam into cubes and no need to fry the yam. My mum mixed the yam cubes into the rice flour, then steam it. And later sprinkle the fresh green onions, fried dried prawns+ fried onions on top of the cooked yam cake.

The best cake ever I taste when I still a teenage kid we bought from nyonya Kuih vendor comevto my village using bamboo stick to carry both side with basket full of varieties of cakes and one of the is yam cake , the yam cake pour special handmade chilly sauce so yummy and the best chillybstill existed till no , I will buy a bottle or two since I stay quite far from my home town another one is chee cheong fun eat shrimp paste chilly sauce that is so yummy

What's includeds in 5 , spice powder ?
Ingredients :
1 kg yam (芋头)切长条
100g dried shrimps (虾米)
4 pips garlic, chopped (蒜头,切碎)
1 tsp five spice powder (五香粉)
5 tbsp oil (油)
油炒虾米,蒜头,油炸芋头,五香粉,加米浆,调味料,煮到米浆半熟,
蒸盘33cm,蒸锅50-60分钟。洒油葱,青葱,辣椒粒,辣椒酱,甜酱。
Batter - mixed and strained (米浆料 - 搅匀,过滤):
500g rice flour (粘米粉)
100g tapioca flour (木薯粉)
2000ml water (水)
Seasoning (调味料):
2 tsp chicken stock granules (鸡精粉)
3 tsp salt (盐)
1 tsp pepper (胡椒粉)

Sweet bean sauce (甜豆瓣酱):
3 tbsp oil (油)
2 tbsp shallots ,chopped (葱头碎)
2 tbsp garlic, chopped (蒜米碎)
1 1/2 tbsp oyster sauce (蚝油)
3 tbsp minced bean paste (豆瓣酱)
500ml water (水)
2 tbsp dark soy sauce (黑酱油)
4 tbsp sugar (白糖)
不沾锅油炒葱头碎,蚝油,豆瓣酱,水,黑酱油,白糖煮滚,
然后过滤蒜头葱头,最后勾芡。
1 tbsp tapioca flour
1 1/2 tbsp water (水)

Chilli sauce (辣椒酱):
5 red chillies (红辣椒)
3 chilli padi (指天椒)
3 pips garlic (蒜米)
1 1/2 tbsp vinegar (醋)
1 1/2 tbsp sugar (糖)
2 tbsp tomato sauce (蕃茄酱)
搅拌机全部打细碎。
** Remark: A stronger texture with reduced water
** 喜爱比较结实的口感,可以自行减少水分

刚照着食谱做了,很好吃😋只不过我把粉浆炒的比较稠、没有水份才蒸,口感就较扎实。如果喜欢偏软的就别炒太干。酱汁我学着kathrine煮,味道很好搭配芋头糕和自煮的辣椒酱、绝配👍👍

放太多油了,像油浸芋头糕,不健康,从来没见过那么油的芋头糕,正宗的粤式芋头糕是不需要炸芋头的,比较健康。
