Excellent series yet again. Not gonna lie I’ve never been much into nasi lemak but I may have to give it another chance. A series on prawn noodles has gotta be done.

Use fresh coconut milk or find "kara" coconut milk from the supermarket. It's a famous indonesian brand that's also sold in malaysia. Not sure whether they sell it in sg. Coconut milk should be slightly salty, never sweet.
wow WOW WOW...... and yes i know what you mean by the pains from cooking sambal. when my mum frys chilli in a wok, i have no idea how she bears the chilli FUMES!! it's choking!

you could maybe try going to wet market to get freshly grounded coconut milk, but i'm not sure if there are such stalls anymore haha.
and maybe also experiment with using coconut powder instead of just the liquid version (to prevent too much squish)
think most ppl add salt into the rice as well, so that it's not just sweet?
Hi Alderic , great effort but i think these things can be improved on season 2 nasi lemak :D
1)i think you forgot to salt the rice unless i am missing something .
2)Also the right way to steam the rice is to do it with bamboo steamer and cheese cloth(or some kind of cloth)
3) I realised the rice is curding (usually due to excess heat) , when coconut boils or heat to a certain temp , it will start separating out into oil and milk , the oil is not very pleasant in the nasi
so i would suggest.
Pour out the rice out of the steamer when done and coat it with coconut milk , then steam it again until the texture you want

I saw some people coat it with coconut milk after cooking the rice but I can't really visualize it. wouldn't it make the rice too wet? do you reduce the water you use to cook the rice?
@@Alderic. when you are steaming it in a bamboo steamer , you dont really need to add any water to the rice , if it is in the rice cooker , then yes you would need to reduce the water , the recipe i saw is 3/4 water and 1/4 coconut milk . For steaming method dont really need to worry about it getting too wet because the rice would be drier than expected .

Ding Tai Fung is probably the safest bet, otherwise there's this joint called King of Fried Rice but the quality may differ from outlet to outlet.

As a fellow Malaysian that grew up eating authentic Kampung Nasi lemak, every aspect of the dish besides the cucumber, ikan bilis and kacang was wrong. Sambal does not need tumeric, lemongrass, galanggal, big amounts of fresh red chilli, and garlic in that volume is not needed respectfully. Another thing,do not blend the sugar and tamarind first, use it in the end because adding concentrated sugar and cooking it can affect the burning point of the sambal, so the fresh ingredients don’t get a chance to cook properly or in malay “ Tumis”.
So traditionally we would often use, dried chilli, some red chili, belacan, ikan bilis, some garlic, ginger (not that much) and shallots. or the most simple version, dried chili, shallots and garlic. Then the amount of oil needed has to be alot so that the blended ingredients could be sautéed for a longer time to ensure full/ maximisation of flavour, until pecah minyak.Another trick to make a good sambal, everytime it looks abit dry add water and let it reduce and do that for a couple of times and let it again pecah minyak. I emphasis pecah minyak because it is so crucial in malay cooking. after that only finish it off with the gula melaka, tamarind and where im from ( Negeri sembilan) we would put a splash of coconut milk inside to give an extra sweetness and depth. Because what I saw in your sambal was basically a recipe for a basic rempah in a lot of malay cuisine, that rempah could be use for rendang, curry, etc but not in nasi lemak sambal, respectfully.
Im a big fan of your channel, I went to guang fa laksa and coconut club, the other day on my 3 day singapore trip. I would say that the laksa I tasted was a bit like a watered down version of a Laksa Johor. The rice noodles were different but it was okay. Coconut club on the other hand was honestly a let down. The rice was good though, me and my dad ate it and we liked the rice, sambal was too sweet in our opinion and chicken wasn’t crispy.
I would love to see you going to kampung areas in central and southern parts of Malaysia to try traditional malaysian food🙌.
And PLEASE PLEASE PLEASE use lots of oil for your sambal, or any sambal. Yes its unhealthy, yes I am aware but thats why nasi lemak is a weekly thing to eat not a daily thing to eat. Oil is important in malay cuisine as it keeps it from turning bad and we need the oil to really fry off the ingredients well so everything is well caramelised and married to each other. Historically malay people were farmers that relayed on dishes that could last for days. The oil keeps the sambal safe to eat as it prevents air to interact with it. Thats why most malay cooking will have a thick layer of oil on top of it, a result of “tumis” and to preserve the food better.

Next time taste the coconut milk before making your proprietary blend… also take note sweet coconut milk will burn at the bottom of the rice cooker.. hence why most will steam or add coconut milk 15 minutes prior to the rice is cooked in the rice cooker..Just my 2 cents..

Alderic! Have you tried cooking nasi lemak rice with f&n ice cream soda water to increase the flavour and smell?
Long time ago, I rmb watching channel 8 Holland V show 荷兰村, their secret for nasi lemak recipe is adding f&n ice cream soda water.
I told my grandma this secret and she added only about 1/4 to 1/3 of a can of ice cream soda water to cook the rice and it smells so nice!!
Even the neighbours can smell.
It was a long long time ago, idk how to cook so I lazy to experiment it again. But I’m hoping to know if it works or not 🙏🏻

Prawn noodles possible? Really wonder where all the good prawn noodles have gone nowadays, given that the prepacked ones cooked at home taste so much better than most offered in most commercial stalls.

It's perhaps a tad unorthodox but pig trotter rice. Not the modern ones popularized by lin ji, but the dark teochew braise, unfortunately often sidelined as a sidekick to bak kut teh

Yooo early gang! Edit after watching: I've never in my life had nasi lemak with ayam bakar. I'm too used to just normal crispy ayam goreng, rempah optional. So I for the life of me cannot agree with your nasi lemak other than the 1 plate :')

I think after all this time we can agree that the vendors put in a lot of effort to keep their quality up. I feel like selling food is so hard because if you lose consistency just for one day, the customer may not return for a good long while.
