Since some animals are viewed as animals and not as humans by NPC's this can probaly show that this was the case of the game having such feature, maybe it was cut during early to mid stage of development.

What makes this feel like more of a animal simulator is the other agressive animals hunting you or challenging you. I was a white-tailed deer buck, and a cougar chased after me and kept pouncing but missed so many times. I eventually rammed it with my antlers but it got back up so I ran up a mountain, that didn't go well because I kept slipping and the cougar sat there confused. Another one was where I was a horse and a wolf pack stalked me down. They literally crouched through the grass then when they got close, (ofcourse howled) then I bucked one in the face and ran off. The only thing that makes it realistic is if your the prey and the predator is near, run, or attack if your animal stands its ground.
This could literally be its own game, surprised rockstar hasn't tred to make inhuman gameplay in open world. They could make prototype by another name or a beast boy game.
The birds are the coolest to play as in my opinion since there are no planes, obviously, but you can see the RDR2 world from that perspective of being up high in the sky. Really cool mod.
I like to imagine that man telling the snake to keep walking wasn't responding to a man modded to be a snake, but what he legitimately thought was a snake and that is just how he would confront a reptile he felt was too close as if it would understand him.
I am kinda bugged that other NPCs treat you as the player, wish there was a way to make it so they recognize you as an animal. But still this is AWESOME!
