For a little girls birthday party: Put some muffin cups in a muffin pan. Sprinkle the bottoms with crushed graham crackers or vanilla wafers. Make your basic goop with strawberry Jello and strawberry soda. Add some chopped and blotted strawberries to the semi set goop. Pile into muffin cups. Chill. Top with cream and a strawberry slice.
I remember this when I was a kid my parents would have a pool party and everybody brought a dish and one of my mom's friends would bring this one and I loved it
I have made this many years ago, it is great. My wife had diabetes and a touchy stomach so I made her a jello dessert she could enjoy. Very simple, I took sugar free flavored jello and used the quick set method to bloom the jello using a large bowl on my stand mixer and wisking attachment on high adding one container of sugar free coolwhip. As it whipped it would start to set and get vary airy. Then place into 4 empty coolwhip container, refrigerated for at least one hour before serving. This is lite and very tasty. Just sharing.
Hello from Texas! My Mom worked at my school cafeteria when I was 7?ish. I believe it was 1971-1972. They made a version of this with shredded diced cabbage and she said walnuts. I can't remember eating it but she said the kids loved it. I believe she made it at home in the Summer as well. I'm trying to find that particular recipe for my mom. This looks awesome. I think I’m going to add the whole can of Crushed pineapple since we love it here. And I may add some shredded or flaked coconut. The coconut will absorb any extra liquid from the drained pineapple. I may add some chopped pecans as well. To finish I will frost the Jell-O salad with the whip cream and sprinkle a little extra coconut flakes on top. Can’t wait to try this My mother served a similar dessert every Thanksgiving when I was growing up. Except it didn’t have the lemon lime soda. And, instead of whipped cream, she added a cup of mayonnaise, along with the crushed pineapple and chopped nuts. And, of course, she had to serve it as a molded salad using her trusty Tupperware Jell-O mold.😉👍🏼
PS I just remembered that instead of 6 ounces of lime Jell-O, my mom used a 3-ounce package of lime Jell-O and A 3 ounce package of lemon Jell-O. That combo would definitely work with your recipe. Definitely would make my own whipped cream. I would use entire 8 oz of cream cheese and the entire can of pineapple. Cherries i would use my pull chopper sprinkle on top
We make a similar vintage lime jello recipe, but it’s a more savory salad called “Watergate salad” after the infamous Nixon watergate incident. That one uses cottage cheese instead of whipped topping, and pecans or walnuts along with the pineapple, but the secret ingredient is a teaspoon or so of creamed horseradish. It’s a very unique, delicious side salad!
My Mom made that in the 60s but as a pie with graham cracker crust and saved some of the crumbs for the top after spreading real whipped cream on it. This was always a wonderful for summer. Thanks for reminding me of this treat.
Love them too. I love the old cookbooks that were from the mid-century 50's-70's. They had menu ideas and grids on how much of each staple item you needed to keep stocked depending on the number of people in your family. They made things the hard way..no microwave or immersion blender in that kitchen. They actually knew how to cook like Julia childs

I will definitely try this one. I make a similar one with orange jello and instead of cream cheese I use cottage cheese and along with the pineapple I add mandarin oranges drained. Make it all the time for family dinners because my son and I love it.

Since they stayed in places for weeks at a time, they would rent a house and my grandmother did the cooking and cleaning. She was given a budget to buy the food. It wasn't always easy to make that money go very far. She told me that one evening, she was trying to figure out what to make. So, she made a big pot of grits. Along with that she had some chili. She took and put a heaping spoonful of grits, put hot chili on top of the grits. To that she added shredded cheese, and chopped onion. Well, she served this to the men that evening, and it was a hit. It tastes like enchiladas!!! She has passed, but her "mock enchiladas" are still a big hit around our house.

you know what else is great in that is a little bit of creme de menthe syrup half a teaspoon to teaspoon or to your liking also inside of your dessert put coconut and chop cherries as well that's really delicious too

My favorite jello recipe is this: one large pack of "dry" orange jello, 2 cups sour cream, 2 cups mini marshmallows, 2 cups drained canned mandarin oranges and 2 cups cottage cheese (don't use reduced fat).... Put sour cream and cottage cheese into large bowl and mix until combined. Pour in dry jello and mix until completely incorporated. Add marshmallows and mandarins and stir gently so as to not break up orange slices. Place lid or plastic wrap to cover bowl and place in fridge for at least 30 minutes to allow jello to set. Then enjoy!! This is sweet, creamy, no mess, and literally NO BAKE and your family will LOVE IT. I also love to do the lime jello and use drained crushed pineapple in place of the mandarin oranges. I take this jello dessert to church functions all the time and it is always gone right away! I have also done a batch of both and placed them in large punch bowl with orange on one side and the lime on the other, it makes a stunning and simple salad. You should seriously try it! I also have my own secret jello/marshmallow cake that I make during the summer and it is also a BIG hit at functions!!

My mother made a version of this where she would make the lime jellow then add pinapple and bananas cut up, pour that into a pan and let it set then she made a topping of the reserved pineapple juice thickened with coolwhipp added then top the jellow with it. I wish I had her recipe. I used to just eat the topping off the jellow. Drove her crazy.

My mother-in-law always made this at Christmas time and sometimes Thanksgiving also but she added a handful of pecan pieces to it and then didn't finish the top off with whipped cream she added a small box of red Jello on the top and she would slice it up and it was one of those nice sweet but light desserts along with the holiday meal that you like to have a long way. As a 70’s baby, I also grew up with my mom making this lime jello salad a lot, but I don’t remember her adding 7-Up Or cherries on top either, but she did load up on the chopped pecans and mini marshmallows, which are really good. I’ve never made it myself because I don’t like pineapple in desserts, but I might try it by cutting the pineapple ad adding the maraschino cherries, along with the mini marshmallows and pecans! Yum!! 😋

I remember this recipe very well--especially at baby showers and church potlucks. I NEVER saw it used as a dessert--it c was always with the salads.

A vintage mold is what mom always used..the copper ones or you can still find the vintage Tupperware molds. They made everything looks fancy
