In the mid 1990s, i worked the graveyard shift at a high end deli/full service 24 hour restaurant in West Hollywood proper. The deli department would receive 20/200 count bags of freshly baked bagels from a bakery called "Sols". Onion/Everything/Rye/Poppyseed Cheddar Cheese/Jalapeno cheese/Cinnamon raisin/Garlic/pumpernickel/ plain/etc bagels were all there to be placed inside a row of display baskets that were behind the deli counter at the front of the restaurant so patrons could select which ones they wanted. Since i had first dibs, i would scope out two of the Cheedar cheese bagals that had the MOST crusted cheddar cheese on the outside of those fresh bagels. The bagels were LARGE and THICCCK. I would ask the deli guy to give me 4 slices of the deli cheese, and two slices of THICK beefsteak tomato that he had in his deli station. I would place said slices of cheese and tomato atop the sliced cheddar cheese bagels, sprinkle them generously with cracked black pepper, wrap them tightly in plastic cling wrap, and microwave them for 15 seconds. The end result, and ooey gooey cheddar cheese bagal sammich, that was a HOT, HOT MESS to eat. I LOVED it. Every time i see a delicious looking artisan bagel like the one you guys both enjoyed, it reminds me of that long gone time in my life. I WISH, I could find artisan, vegan Cheddar cheese bagels like the Sol's bagels i use to eat. Now, I'm in nostalgia/cheedar cheese bagel memories hell.
