Could it be the cream cheese was too cold still? I mixed the gelatine until it cooled down a bit then added it to the mixture.

Yea u have to use powdered sugar I made this cheesecake 4 or 5 times first time I put normal sugar and you could taste the sugar so you have to put powdered
You will get 12-16 depending on the cup size you use. If it's part of a dessert table/buffet, I like to use smaller cups so people can try a variety of flavors without getting too full. If it's the only dessert I'm serving, I'll make large cups.

Yes I would say so. It is not as firm as the block. Next time you might want to add some gelatine that's been dissolved in hot water to help them set.
