Nikki, I never never made a taco with street corn before. But after seeing how much your tacos looks like the corn is the star of the dish, I definitely will be now.
These meatballs remind me of your meatloaf, which is one of my very favorite meals! I don't like mock meats, but I LOVE your "meaty" recipes! Mushrooms & my gut don't like each other, but I sub in finely chopped tempeh & it always turns out great! Thanks so much! I can't wait to try these meatballs!
Good as Kale • I'm so glad for your comment about subbing tempeh for mushrooms! We have friends that we like to invite over for dinner. They are meat eaters and do not like mushrooms. When I saw Nikki's casserole, I immediately wanted to make it for them but knew I'd need a mushroom substitute. Thanks for that!

I just made the tacos and they were delicious! I used tempeh instead of chickpeas or the vegan chicken. Highly recommend!

Excellent vegan dinner recipes Nicole and the Vegan chicken 🌮 looks delicious 😋 but due to prices I would prefer the chickpeas version. Could the casserole be cooked in a multi cooker ( for example instant pot) or Airfryer ( such as the Vortex 4 in 1 airfryer by instant brands that make the instant pot) that has a bake or roast function? Love 🥰 the video and love 💕 Nicole and have a great week.

Each recipe looks fantastic 😍 The only trouble is...I can't stand chickpeas! Is there another bean I could substitute? People always say cheese is the hardest to give up but for me chickpeas are the hardest to add! 😁😒
Good question! Any legume you like will work! Black lentils, kidney beans, white beans or even vegan chicken or tofu will work! If you use tempeh or tofu just season it first ☺️❤️

Hey Faith, here's the link go.magik.ly/ml/1edz3/ It's $20 and I use it to chop veggies, make banana nice cream, grind nuts into small pieces for meatballs and meatloaf, and make pesto. It's so versatile and I use it aaaalllll the time lol The longer I have it, the more uses I find for it. Hope you enjoy!
Mushrooms would be a good chicken substitute
I've seen people cook all types of mushroom in the shape of meat, they taste really good when fried. There's even a species of mushshroom that tastes just like chicken. We were meant to eat fungi.
@@Cybella tbh mushrooms have always tasted way better to me than chicken when eaten as is. Unseasoned, plain chicken is dry, pretty bland, stretchy and gamey while mushrooms don't need anything added to taste good.

Where do you find vegan chicken that isn’t rubbery? Yummy btw
Good question! I think the texture is more about how you cook it than the chicken itself. Some brands are better than others of course but I find that using medium low heat, enough oil and not over-stirring so the vegan chicken has time to caramelize/crisp up helps a lot with the texture! My go-tos are Gardein, 365, Daring, Morning Star and Like Meat 😊 Let me know if there's a specific style or recipe you're interested in making and I'll walk you through exactly how to do it! Hope that helps ❤️

I would absolutely DEVOUR all three of these dishes, and I love how many times you use the word "cozy" in this video. 🏚🍷
Side note, I finally made a BIG banana pudding with your vanilla pudding recipe and it tasted great. 🍌 I'm still in the testing phase, though, haha. My homemade whipped cream deflated, and I need to use a little less pudding or a little more cookies next time. But mistakes are how we learn. Tasty, tasty mistakes.

I love your attitude! I feel the same way! It’s so easy to put pressure on ourselves to make everything perfectly but at the end of the day, it’s just food and it’s always going to be good, even if it could be better. It’s meant to be fun and creative so I try to keep that in mind when my recipes are still in need of some tweaking 👩🏻🍳 Also, whipped cream has a tendency to deflate as it sits so I like to add it right before serving. It’s less convenient but it makes for a tastier end result. It sounds like your recipe is delicious though! Please share so I can try it out ☺️ I LOVE banana pudding 🤗
