Boudin is the perfect recipe for this. Great way to cut quality meat with rice, stretch it but also make it delicious. My next sausage is Central Texas beef, after that Italian, but boudin is coming right up. Last time I made it, it didn't last long, 20 pounds!

Killed my first deer last weekend and this recipe came out perfect. I filled the pot with 70% beer 30% water for the three hour simmer and it came out awesome. Almost had as much fun cooking it as I did eating it!

Where did you get the sausage stuffed?
Just curious if your deer liver had a stout gland smell? I've never saved the liver until now and don't know if that is normal for deer liver.
Most likely, you got bile on it from accidentally cutting the gall bladder. That will do it. It will also leave a bitter flavor
What kind of wood did you smoke with?
It was a hardwood blend, mainly hickory and oak.
