And pan con chicharrón, Chinese fried rice “chaufa” with tallarin salteado 😻👌 caldo de gallina 🍲 it’s a delicious 🤤 chicken soup 👌 chupe de camarones 🦐 🍤👌lomo saltado 👌and please ANTICUCHOS it’s very yummy soft tender juicy omg Ecuador and Peru gastronomy it’s amazing love it 🥰 take care guys ✌️✌️

    Te food in Ecuador is amaizing.
    I in love for It, hornado, papas con cuero, encebollado, arroz marinero, the bread es muy rico 😋 fritada ceviche

    Dato importante: coman el encebollado de preferencia en la costa sea en Manabi o en Guayaquil ya que el pescado es mucho más fresco y adquiere mejor sabor, incluso con plátanos fritos o pan enrollado.
    También les faltó el Yaguarlocro y el caldo de salchicha.

    The bolon is supposed to be eaten with the tomato tree sauce which is the chili sauce has that has mince onions and cilantro in Spanish it’s called (ají de árbol de tomate) that makes the bolon tasty or some areas they also give you a little beef stew sauce to eat with the cheese bolon. But the best bolon is the one that has chicharon and cheese it’s yummy 😋

    When someone gives you an extra it is called "Yapa" here in Cuenca 😁. Hii!
    You have to try "cuy con papas".

    Next time if you go to Ecuador 🇪🇨 you have to try the best shrimp ceviche at cebiches de la rumiñahui they have it in Quito, Guayaquil it’s different from the other places delicious 🤤 but fish there it’s not good 😅 they also have the best black conch “conchas negras” asadas 👌👌👌and also YOU HAVE TO TRY ECUADORIAN CRAB 🦀 OMG SO GOOD 😍 and only in Ecuador you can find that kind of crab 🦀 so so good there’s a lot of yummy food you have to try guatita biche , bollo, cazuela , caldo de pata , the problem it’s that not everybody cooks the yummy way so you have to be lucky 🍀😅 mm in Guayaquil you have to try naturissimo they have the best slushy yogurt version I don’t know how to explain is unique with pan de yuca 👌👌👌 also your boyfriend it’s going to fall in love with sanduche de chancho from Guayaquil it’s like a croissant 🥐 with the yummiest roast pork with the sauce and onions with lettuce omg it’s unique 😍😍😍

    I’ll have find an Equadorian restaurant to try the corn based and pork dishes! I had wrongly assumed you would find a lot of beef, forgetting that Equador is along the coast so of course there would be fish. I’m also am surprised that the food wasn’t spicy, again wrongly clumping all of South America together and not accounting for country/regional flavour differences.

      Finding an Ecuadorian restaurant would be awesome! We had underestimated the amount of influence the coastal access has on the cuisine as well - sadly I (Nicole) am not a fan of seafood, but Mico loved having access to really fresh, good, and inexpensive (compared to Calgary) seafood. We would be curious to hear if you find lots of plantain-based foods in an Ecuadorian restaurant in Calgary as it is such an important part of the gastronomy here but we rarely see plantains at home (or maybe we just don't notice them?)

    @Nicole and Mico, don't be offended, we call the Marmaset, Mico. It once was called a pocket monkey. With all due respect it's Cevi-Che not chi, like Ché Guevara.
    Also, Ceviche isn't a Mexican dish. It's from Ecuador although Peru loves to take credit for everything.
    You might want to try, Caldo de Bola de Verde but I Guayaquil not the Andes. Juice, Quaquer is my favorite made with pineapple. It's to die for and Narajilla juice my all time favorite. It's a fruit which originated in Ecuador. They tried to grow it in many countries until they were able to graft it. But it's not as good as the none grafted fruit.

    Creo que les falto el Caldo de Salchicha, Es muy popular para nosotros casi como el encebollado, pero los extranjeros pasan de probarlo por su apariencia "Caldo Negro" y piensan que no les va a gustar. 🇪🇨

    Have you found that cheese comes in most dishes?

      Quite a few things do have cheese in them. It seems to have a lot of use in Ecuadorian food to help things stick together and also add the taste of salt (the cheese must commonly used is very salty). There are definitely many dishes without cheese if you can't eat it, but it is one of our favourite food so we seek it out!
