    I'm curious if by boiling them do the vegetables loose any nutrients? Could this same process be done with a quick steam to preserve all the nutrients?

      Blanching is the process of stopping the enzymes that make the peas age and go bad while preserving color, texture and taste!

    You have blanched it for too long. A minute is best as each slice stays firm and in shape.
