The 640gsm weight is particularly useful if you use a lot of water within your washes as the paper will resist warping.     I think you need to be very brave with watercolor. I remember when I took art classes as a kid and teen, we weren’t allowed to work with watercolor - were told it was very difficult. Working with it now, for a lot of reasons - no toxic fumes, easy to pull out and put away, and of course the beautiful effects - but I’m still afraid of it as a medium!
