can additional data elements be added to an EMV chip after manufacturing?
EMV Standards provide "PUT DATA" and "UPDATE RECORD" which can be used to update the data in the Chip.
How do I extract the pin code from the chip and create a different pin code
Guess you are referring to the "PIN". You can not extract the PIN. But change is allowed via post-issuance command PIN CHANGE.
