You see, the reason why Sans is a meme is because he has admitted in canon that he really doesn't care much, meaning that unless it's really edgy or too tiring, the community could make him do the most random jokes in history and it would still not break character.
Same goes for Undyne, but with intense situtations instead, the more intense it gets the more in-character Undyne can get, I still love those goofy 8-Bit characters I swear.
