You can put refrigerated eggs in a bowl of hot water on the counter, and they come to room temp in about 30 minutes. Just so they don't have to be left out.
Fill a large container of water (cool from the faucet) and put the eggs in (still in shell). If they sink to the bottom, they are okay to use. If they float, throw them out. This is also how you test eggs that have been in the fridge for a while and you want to be sure they are okay.

Try mixing 1 C vanilla Greek yogurt with a half C cottage cheese and stir in pumkin a pumpkin piespice until the pumpkin flavor suits you.
