    Peas and carrots in a potato salad is excellent! There are so many ways to do a potato salad, my personal fav is a dill pickle potato salad but my mom puts carrots and peas in hers and it’s great. Love the video ❤

    Wouldn't taking out at 138 rising to just above 145 be a bit more moist and still safe nowadays

      Thanks for watching and the comment. Yes you can take out at 138 as long as the final internal temperature is at least 145 it will be good. But I find the important steps for a moist roast are the dry brine for 24 hrs, tying the roast to ensure even cooking , let roast sit out for 1 hr at room temperature before going into oven and finally letting the roast rest for 30 minutes before slicing. I find doing these steps I always have a moist roast. I followed the guidelines from National Pork Board for cooking this pork loin. Hope this answers your question and have a great day 🤗😊

    Why would you not tell us how long to bake it for!? You only give the temperature. Some of us don’t have a thermometer.

      It took approx 4 hrs in my oven but I recommend everyone to get a thermometer even an inexpensive one especially when cooking poultry as temperature needs to be 175F to ensure you don’t get food poisoning.

    148 is too much. Cook to 140, it will rise to at least 150.
