Is there a script for nesting that you have made or know of? I want it to work in illustrator, where each object which is grouped is 1 design, and it packs all designs with minimal wastage of the material. Basically it should make a cut layer like in this and fit small and big designs in the artboard , leaving the artboard empty if required. Basically minimising material wastage

I don't have a script for that. At one time I tried to make a script for it, but it failed. A web search for "illustrator nesting" turned up lots of results.

is there a way to automatically do 45 degree angles where the colors touch like the spot where they intersect on the cutline 45 out to the edge of the bleed

The part shown manually in the video? No, or it wouldn't have to be done manually. The script can't do it all, but should save a lot of time. Some of the work requires human intelligence.
