I put my beans, rice, etc in vacuum bags and seal them before putting them in the bucket. That way, I can remove a small amount without compromising the entire container. I've also had the gaskets on those lids tear and fail after being opened a dozen times or so.
I ordered replacement sealing rings. I've had only one fail. I always use 5 gal buckets with 5-7 mil (heavier for pointy grains) Mylar resealable bags and put in 2000cc before squeezing out the air. When I open them, I put in another O2 packet. I know it's sealed if I check it a little later, and the bag has been reduced. I buy only US made (PackFreshUSA) to ensure the safety of the bags and no plastic contact. Even in my pantry, I use jars and vac seal, with reusable ForJars lids (open with bent lid on top of jar lid to prevent damage) and mark used.
I have used soda bottles to store beans. I use either a 20 oz or 19.6 oz soda bottle. I rinsed them out and let them dry thoroughly. Then I pour the bags of beans into the bottles and I add an oxygen absorber. I close up the lid tightly and I find that the bottle sucks in as the oxygen absorbers are doing their job. The bottle sucking in shows me that it is water vapor proof. I bought a diesel funnel to use to fill the the bottles because I could cut the long tube to the right diameter to easily funnel the beans into the bottles.

I've had trouble a few times getting the rings on my buckets, using a rubber mallet. It's like it's just a fraction to small and won't stretch. I actually had one crack. I solved the problem, when I get a stubborn one, by heating water in my WB canner, not boiling but very hot, setting the rings in the water for just a minute or two. It slightly softens them enough to help stretch them over the rim, still using a mallet. Rings tighten when they cool, never a loose ring or failure.
Tried that... didn't work. The problem comes if I buy the buckets and lids separately. Now I buy the buckets and lids from the same company and that seems to have solved the problem.
Dr. Pam, rotate the older beans already in your level 1 containers, I do the same with flour in its canister, the bottom few inches can get old if not emptied and rotated atop the new.
Very informative video, I love watching you guys doing your prepping and sharing that with us. I to started out with 5 gallon buckets using Mylar bags but if I’m the only one that has to cart anything out of my home because I have to leave in a hurry I’m not gonna be able to carry the 5 gallon buckets. I learned from an Amish group of women that were guests on the Phil Donahue show that once a bucket was loaded, a paper plate of dry ice was placed on top of the contents and the plate was removed once the fog poured over the top and then the lid hammered on. The fog exchanged place with the oxygen in the bucket.
I must have been tired - I wrote Amish instead of Mormon. I also visited a church/ward where they demonstrated their skills in person and sold their books.

I use a chamber vac for long term storage and then put it in a heavy plastic tote container. I have 1lb and 2lb bags so I can choose the size I want depending on how much I have used. It works for flour also.

Using a lot of different varieties of beans, creativity became a necessity with storing them. Daily pantry is Nescafe (instant coffee) square glass jars, 1/2 & full gallon jars, then lastly buckets.😊

As a side note... I have always used Wallaby's oxygen absorbers and Mylar bags, but have recently switched to Pack Fresh. Several sizes of oxygen absorbers and the Mylar bags are thicker.
For those without a big strong man to help, I set my big bags on a chair and tip it to fill my bucket then set the bag upright again. It's not especially fun dragging big 50# bags around but I try to find 25# or 30# which can handle easier by myself(even though I have a big strong man around...he's not of the same mindset I am about food security, emergency preparedness, etc so I don't involve him n my projects.)
Rose, try fermenting in a Gamma Lid Bucket . They are not Air tight . Simple O ring will make my air locks work . Gammas Leak bad. That said I love what you two do .

We do that with the buckets we use for long term storage for both dry goods and for storing water. After spraying I wipe it around to be sure all surfaces are covered then let it air dry before adding food.
Beans in bulk can be found at Costco, Winco, and at Azure Standard, plus other online sites. Costco business centers usually have different types such as red, black, pinto, and garbanzo. Regular Costco's a lot of times are limited to one type.

While it varies a little bit from bean to bean.. 1 cup they all come in +/- at > Calories: 230 Protein: 17.9 grams Fat: 0.752 gram Carbs: 39.8 grams Fiber: 15.6 grams Oxalates are naturally occurring compounds in plants that can increase the risk of kidney stones in some people. On average beans are fairly high in oxalates..it does vary somewhat from bean type to bean type. Many of them come in around > 40 grams of oxalates per cup.
Because of the protein in the beans, the carbohydrates are absorbed more slowly. I am a Type 2 diabetic and when I eat beans, my blood sugar stays more stable.
You shouldn’t touch your beans bare handed. The oils on your hands contaminate your beans. You should always use mylar beans in your buckets. That is a major error people make not using mylar bags when needed/suppose too.
Do you really eat all those beans and stored food? I turned 68.. I started to think about the time I have left on this earth.. And will I actually use the food I've stored? I don't really have that much compared to most, but I've decided to keep only about 2 weeks of canned and frozen food handy.. Then keep only Very long term items,.. in the closet. I don't like beans, ut There are some of those thongs in the closet. If TSHTF.. I doubt I'll survive, but young folks can hopefully find my closet and maybe survive. If it's a political issue and we're at war or having to hunker down its a long term problem that I'll just deal with the best I can, and isolating myself with my food I don't think is the right thing to do. Its nice you have your son helping as I see you are getting very forgetful over the years. Put the oxygen absorbers in ALL THE BUCKETS you plan to fill for that afternoon then you won't forget.

My rock hard ones get cooked in my small presto pressure cooker. They cook up just fine.
We have eaten beans stored for 20 years that were just fine. Adding a teaspoon of baking soda to the soaking water helps soften very old beans.

I’ve heard using baking soda helps. And wondering if cooking in an Instant pot or another pressure cooker would help.
Try cooking your old beans in an instant pot.
