After I removed the 2 bolts, it was still stuck. I noticed some paste used to seal it to the engine block. So I said screw it and aborted the job for now. Any advice?
That's your old ass deteriorated gasket from a gazillion years ago. Separate the hose from the housing and scrape that old melted gasket away. You can see ChrisFix do it in this video ruclips.net/video/s--5ft5YiHg/видео.html

Pull really hard
Get a wire wheel drill bit to clean off the old gasket before replacing with new thermostat.
