      We have an annual food-focused Heritage Festival in my town. Over 100 countries participate and every culture that has some sort of kebab or skewer is serving it. I like to call it "International Meat on a Stick Day."

    This is quite possibly one of my favorite Sorted videos ever. Firstly, I gotta say, as a Taiwanese-American, it warms my heart to see so much East Asian cuisine featured on this channel over the last few months. Secondly, of course, I gotta ride for my green onion pancakes and pork floss. Can't go wrong with it. Thanks for the channel for inspiring me to cook and learn about different cultures through food!

    Hey, Viewer from Taiwan here.
    Never thought I would see a dish from my country appear on Sorted!
    That dish "Cong Zhua Bing" (Ben's pronunciation is not exactly... correct, but I don't blame him cause mandarin is fuckin hard) essentially describes what it is in name.
    "Cong" (pronounced closer to "tsong") is scallions, which is what's in the pancake. "Zhua" means "grab", which describes the final step before its served. The vendor would crimple the pancake (with hands or utensils) to crack and create flakes on the outer layer to give it more of a crispy texture. "Bing" is just simply "pancake/pastry".
    Therefore, the more common literal translation for this dish is "Scallion Pancake".
    As with the filling, we've reached a point where we put pretty much anything in it, but the most common filling you can find at a vendor is eggs with Basil leaves. Cheese, corn and other types of pork (ham, bacon...etc.) are also indeed very common.

      Cong zhua bing is my ABSOLUTE favourite Taiwanese food. As a Singaporean, I look forward to eating it the most when I visit Taiwan. It’s simple and so so so delicious. Taiwan truly has loads of great food but cong zhua bing to me is god tier 😍

      Woooo Taiwan Represent! I would also like them to try things like Orh Ah Mee Sua which is an Oyster vermicelli with intestines and it's usual accompaniment orh jian which is an Oyster omlette.

      @@SortedFood in China, we also call them Shou Zhua Bing, which means hand pulled pancakes because in the Chinese iteration, you wrap fillings like bacon/eggs/cheese/lunch meat/etc during the last step of frothing the pancakes and (kinda)wrap it up like a burrito leaving one side sealed and one side open. It’s a very popular snack and there’s usually also sauces to be added during the rolling of the snack, like mayo, black pepper sauce, ketchup, siracha etc.

    as a Vietnamese/Laotian american, i was sooo happy to see banh cuon on todays episode! Excellent job by Jamie for knowing it right away! But in Barry's defense, bahn cuon has definitely made its way in laotian culture too! :D

      ​@@nezhat616 i am no food expert, but they are definitely very similar! (kind of reminds me of viet pho vs khmer ka thew) i wouldn't be surprised if banh cuon was adapted from cheng fun tbh. when i think of a traditional banh cuon vs a traditional cheng fun, i think some differences are that banh buon is usually thinner in terms of the rice roll, and cheng fun is usually more neutral in flavor by itself (think rice roll + shrimp that are both steamed), picking up a ton of the sauce flavor (of course there are different versions of each, but the most basic/traditional versions). There's definitely overlap in terms of filling and sauce options too. i will say one of the most traditional recipes of banh cuon is a mix of ground pork, scallions, and wood ear mushrooms (seasoned and stir-fried together before rolling/wrapping) topped with the sauce (fish sauce+sugar+lime+chili), fried onion/shallots, and slices of cha lua / yaw (vietnamese /lao name for a blended and steamed pork meat roll).
      Again, I AM NO FOOD EXPERT just a 50%viet 25%lao 25%chinese asian american excited about her culture's food lolol I would def appreciate and welcome more answers to your question too!

      ​@@nilandax0 This is correct. Banh cuon should not be as thick as cheng fan.
      Banh cuon can have a filling or you can eat it plain with cha with vietnamese green mint and bean sprouts + fish sauce on the side or you can have it mixed together. depending on if you are north or south.

    Heya, Sorted! A Serb here!
    While I don't even wanna go into the intricacies of pronouncing pljeskavica correctly, haha, here's a friendly tip that may come in handy when pronouncing food names from the Balkan region - in Serbian language (as well as Bosnian, Croatian, Bulgarian, and Macedonian), the letter J is read as Y, so ajvar would sound something like "eyevar," for example.
    However, I don't think ajvar is used that often as a garnish with pljeskavica. Traditionally, ajvar is "zimnica", which we use as a term that encompasses a variety of side dish and garnish we prepare for the winter when there are no fresh vegetables. A lot of families pickle and ferment their own veggies, so you have ajvar (and similar dishes in jars with different flavor profiles and ingredients), bottled tomato (not ketchup!), various jams, and "turšija," which is basically a giant jar/barrel where we pickle a mix of veggies, such as carrots, tomato, paprika, cauliflower, and so on. Oh, and we also ferment cabbage and use it for delicious stuff like sarma (cabbage rolls)!
    As far as pljeskavica goes, the secret trick is to dice fresh onion and mix it with the minced meat before you prepare the meat. You can also add some spices to the meat or even some chilli peppers! Also, while there are several ways you can prepare pljeskavica, the best way would be on a grill and using wood as a fire source. The meat will absorb all that yummy smokey flavor and add a whole new dimension to pljeskavica.
    If you're ever having a barbecue, make sure to give it a try and make your own because I'm positive you won't be disappointed

    I didn’t feel like cooking at all yesterday and was in the process of ordering a takeout. While doing so I was watching a Sorted video where Ebbers had cooked a duck breast… fast forward a little, I ended up cooking a full on roast chicken dinner and closed the takeout app…. Thanks guys for the constant inspiration 🙂

    It warms my heart to see something from 🇧🇴 Bolivia!! My mum used to feed the hot version of Api to me as a child for breakfast and it was my absolute favourite 🥰 my mother grew up in Bolivia and we live in NZ so it was her little piece of home ❤ I haven’t had it in so long because it’s hard to import but you brought my mum to tears seeing her country’s food

      @@lanazubak6212 Ja sam recimo odmah pomislio da je pljeskavica, ili mozda neko veoma slicno jelo od komsija sa Balkana, a cim su rekli da se tradicionalno koristi flatbread znao sam o cemu se radi. Mozda je pomoglo to sto sam jeo pire krompir sa pljeskavicama u to vreme :D

      Not authentic at all, we don't serve pljeskavica with ajvar here, street or restaurant. Pljeskavica is usually served just with raw onions + kajmak. Gde se to kod nas pljeskavica sluzi uz ajvar?

You always have a variety of condiments, and ajvar is usually one of the options (so is ketchup, mayo, mustard, shredded cabbage, pickles, lettuce, tomato, sour cream, chili flakes, cheese etc.). That raw onion and kajmak only purist crap maybe only applies to Leskovac, the rest of us like our options.

    What a episode! Must be said, the ability of the “normals” here to identify region, and even more so influences, is simply stunning. That Baz pulled out the tie was simply shocking, and Ben couldn’t have delivered that little uppercut any better. The man was beaming for pete’s sake! The breaker condition was kind of a throwaway, though a logical one. It really drove home the idea that you don’t need to travel the world to connect with its cuisine, repeatedly it would seem, though I’m sure that helps. I really need to “food travel” more. Thanks folks!

    Hello from a Taiwanese American long-time viewer! Seriously so excited to see cong zhua bing featured today 🤗 BUT I didn’t even realize that it was a scallion pancake until Ben revealed what it was 😂 it’s most commonly traditionally eaten with egg as breakfast, and the fillings like corn, cheese, and pork floss are common for another breakfast item called dan bing 蛋餅 or egg pancake. We do have a ton of Japanese influence, but not so much Dutch or Portuguese. Except for Portuguese custard tarts, we LOVE those here 😍 anyway, hope to see more Taiwanese dishes in the future!

      @@Fitz1993 some people the allergy is only to raw pineapple and it's juice due to the enzymes. Where cooked pineapple and it's juices only may cause a small irritation.
      Another issue is pineapple juice is used in so many cocktails and fruit juices that unless your actively watching out for it you'll wind up with it sooner rather than later

      @@Captainwaitwhat That's not what I asked... Obviously if you are allergic to something the impetus is on you to be vigilante and proactive enough to avoid the allergin. What I asked was, "how often are people trying to force you to consume pineapple", because they stated that no one takes the allergy seriously and that would only make sense if people were actively trying to force or coerce them into consuming it. A company adding pineapple juice to there breakfast juice isn't the same as no one caring about their allergy....

    Pljeskavica is usualy paired with a flatbread called "Lepinja" pronounced as "Lepinya" and "Ajvar"-"Ayvar" but also with raw onions and "Kajmak" -"Kaymak"wich is almost like a butter that melts when warm.

    I feel the same as Barry in the post video clip! As a person allergic to citrus, mainly oranges, lemons, and limes it sucks!! I get offered orange juice whenever I go out for breakfast, I love seafood and have to say over and over leave the lemon off, and I can't have very many mixed drinks cause of the lime and lemon!

    I would love to see episodes where they concentrate on one ingredient and make/use it many ways. Maybe see how the normals use it vs. the chef and also unusual ways to use it. They could do kale, fennel, summer squash, tomatoes...etc

    Awesome video! Loved the inclusion of pljeskavica ❤️ I was born next to the serbian border in Hungary and had pljeskavica frequently it's delicious!
    Also for the next episode I'd recommend the hungarian summertime favourite: lángos.
    It's a big fried dough slathered in garlic either in oil or butter, then topped with cold sour cream and shredded cheese. And salted! It's hearty, it's oily,it's delicious!

    man, I have lived in Taiwan for 5 years and have had tons of different scallion pancakes but I really need to try more variety because I never had one like that. Usually they are a good after bar snack or early breakfast filled with egg and ham.

    As an Indian living in Germany, Ajvar is something I fell in love with after moving here. I can find them in my local supermarket AND a Turkish store. I just have it with bread, and it is heavenly!

    I love to see even more representation of food from the balkans, though i have to agree with one of the comments saying I didn't quite recognize it at first and that at the actual street vendors' we don't usually have the mixed meat kind 😁 hearing English native speakers try to pronounce the words is always fun too, you weren't too far off the mark! 😌

    All of the Global games (Street Food, Breakfast, Holidays, Ingredients, and Cooking Techniques/Methods, etc. ) are my favorite formats. I've created a playlist of each one and one that has all of them.
    Sorted is by far my favorite channel. I basically have it playing on my tv 24/7. Drives my hubs crazy. 😂

    When I saw that last one, I immediately thought of Perú and Bolivia because here in Venezuela we have "carato" which is basically the same, but here we don't have the variety of corns they have. Awesome video, I liked it a lot!

    Woooo Taiwan! I'm an ABC (American Born Chinese), but my parents are from Taiwan. If you guys ever do a Sorted Vacation for food, Taiwan is somewhere you have to check out. They also recently lowered the quarintine time to just 3 days.

      @@kristylovesmakeup2986 Its just the general term. To go into more detail at the risk of getting some Chinese Nationalists mad. Technically Taiwan is officially calling itself the Republic of China, this is because during the Chinese Civil War after WWII; the losing side sadly was the democratic side and they ran to Taiwan. Also technically US, EU and many other country don't acknowledge Taiwan as it's own country due to Beijing's 1 China policy which countries have to choose between recognizing Taiwan or Mainland China as the "real" China. Therefore like all except a handfull of countries (one of them New Zealand if I remember correctly), recognize Mainland as the "real" China due to the economic benefits. Fun Fact: Up until Oct. 25th 1971, Taiwan held China's UN seat.

    As someone from Serbia, you mixed a few things into the first dish, you normally wouldn't. Ajvar is a more lunch or dinner type addition served with the main course, but can be eaten simply on bread, not put normally on pljeskavice. Pljeskavice are more served like burgers, with fresh onions, and salads in it. Also as far as dairy products we only put in kajmak.

    8:40 - omg i *lived* on pork floss and steamed egg during college. steam some eggs in the microwave, add some leftover rice, garnish liberally with the rousong, and drizzle some oyster sauce or hoisin on top... *so* damn good...

      @@SortedFood Also, if you haven't, make your own Ajvar. Store bought Ajvar tends to have Aubergine/Eggplant as the main ingredient, as it is cheaper. But home recipes usually only consists of a third or even less of it (some even have none).

    i live in china, and make those bing panckes all the time. the street vendors here just use frozen ones, and you can get them at any supermarket. here they just heat the bing for a few minutes on each until it fluffs up, break an egg on the grill, lightly scramble, and drop the bing on it, so the egg sticks to the bing. they fry a piece of bacon, or a split sausage link, and big piece of lettuce, and add it to the bing with some very spicy sauce. maybe add pork floss, then fold it up and serve in a paper wrapper. very common and delicious, and easy to make at home

    All great meals but I would really love the food team and Ben if they could cover New Zealand, Polynesia, and Micronesia as a region of culinary ideas. There are things like hangi (Nz) and Umu cooking that can be reasonably recreated in a smoker not exact but close there's a thing called "boil up" a soup style stew with varying ingredients that is awesome in winter. Ingredients like eel, kina(shellfish) wild boar, deer are common place so seeing your take on them would be cool.
    in all of the round the world vids you guys always skip over the region. and as someone who lives in the region I think it would be cool to see this slice of the world represented too.

      This would be awesome (and hi from Christchurch, New Zealand!). Even including some indigenous flavours from Aotearoa New Zealand, like manuka (fabulous for smoked foods, as well as in honey) or kawakawa - makes a great tea/tisane but also a uniquely peppery flavour in foods. We also have world-class wines - Central Otago pinot noir for example. All of which might be easier to get your hands on than some of our stunning seafood or game.

      I was mostly commenting on the fact that our region of the world's representation and is non existent on the channel and as a long time viewer and subscriber it would be cool to have their take. It's a consistant theme of Europe, Asia, South America, Middle East and maybe once in a while Africa and (not trying to be political) it comes across like blatant ostriching about the bad parts of British colonialism.     The food i eat as a Laotian is borrowed from different asian cultures, so much so i never know it's origin. Banh cuon is a dish my aunt makes from time to time and therefore i consider it a "treat". We use different sauces for it, typically a sweet and hot chili. And i was so happy to see it on here! Nobody else i know ever makes it, but sometimes i'll find it in the market. So i would love for ben to take a crack at it someday. Also thank you for the shout Barry! You dont know how much it means to me and other laotians to even get the smallest acknowledgement.

    I immediately recognized the pancake because there's a bubble tea shop near my work place in Germany where you can buy them. :) The owner is Taiwanese and she recommended the pancakes to me, I can absolutely understand Barry's reaction. They are absolutely delicious, highly recommend them! :)

    I'm from Serbia and had no idea that was a pljeskavica. The bread is fine, we usually use a somun which is a turkish bread. I guess the topping might be urnebes? It's definitely not one of the more common toppings we use for it. Also, as far as I know pljeskavica is usually made with only ground beef. Street vendors are definitely not putting lamb into it since we don't have a culture of eating ground lamb and it's expensive anyways. No offence taken or anything just my observations.

    I think Barry thought that Taiwanese dish was from Malaysia because it's similar to Murtabak. These all looked really good though! Super glad I moved to a large city so I can try more diverse ethnic dishes because I used to live in a tiny town that we called a "food desert."

      I’m not Bolivian, but we Peruvians have something super similar called chicha (chee-chah). The trick is putting the fruits (apple and pineapple, in our case) at the end, so you’ll have different textures.

    1. Even though at first I thought "Oh, this is from around here somewhere", I did NOT recognize pljeskavica 😂 . That didn't look like any pljeskavica patty I've ever seen, especially served like that. So when they started analyzing the ingredients, I was very confused, since everything WAS pointing in pljeskavica's direction, and then the meat patty composition cinched it.
    2. The J in ajvar is pronounced like Y - ayvar. It's wonderful 🥰 .

    the second one is also a classic Chinese street food ~ we called them shou zhua bing(handheld bing/pancake/flatbread) we can add egg, chill oil, sausage, chicken breast, bacon…veggies etc.

    I will say, another banger. On the note of bangers, ajvar with a spicy sausage (for example Sremska, a serbian sausage) in a homemade hotdog-style bun? Maybe some fried onions in there? Wonderful. Strongly recommended.

    My favorite way to eat scallion pancakes is with a fried egg and white pepper! And if I feel up to making it, alongside dry noodles with black vinegar and Taiwanese sauerkraut. Anytime food, but one of my favorite memories is this meal in Keelung for breakfast 🤤

    We finally got something from Bolivia! I grew up there and it's definitely one of the least represented South American cuisines at least in America. It's oftentimes overshadowed by its neighboring country of Peru since there is a shared history and culture.

    You guys should try laddu peethi if you haven't before. Super delicious street food from Lahore, Pakistan. It's basically balls of mixed lentils which are deep fried (the laddus), served with green chutney, sweet and sour plum and tamarind chutney, white radish and sliced onion with yogurt. It's super yum

      I've been living in Serbia for 3.5 years and I've had my fair share of pljeskavice, but I've never seen them like this? Maybe because I HAVE to have cabbage on mine :D It sounds like they just did the meat and urnebes and ajvar. Is that the "traditional" way of serving it?

      @@Morghena There really isn't a traditional way, we just very often pair grilled meat in any form and ajvar. For pljeskavica many people would say that onions are a must. Anything you like really

      @@Morghena nah, what would you call the most traditional way of serving it is with only chopped raw onions, but tbh there isn't any real tradition about it. I do recommend finding good pljeskavica and eating it just with onions because it let the meat shine. Ajvar isn't commonly used among street vendors as it is too expensive to be used as free condiment xD it's very rare to see someone using it with pljeskavica although you can ofc. Kajmak is also delicious on it because it melts beautifuly on hot meat and it's more common as higher end addition. Most popular everyday condiments at street vendors are ketchup and mayo, chilly flakes, onions, cabbage, letuce, tomato, pavlaka(sour cream) and ofc urnebes. Prety much everyone has it own personal combination out of this ingridients and you can pretty much put anything so you do you 😊

      Kajmak is delicious! I'd love to try it with just the onion, but my stomach doesn't like raw onion unfortunately. So I usually get my Pljeskavica with pavlaka, cabbage, urnebes, ketchup and then lettuce and kajmak if they have it. Now I'm hungry :D But it's way too hot for grilled meats 😭

    I was absolutely not expecting to see Api Morado here, mi grandma used to make it in winter and it was delicious along with buñuelos.
    If you do another one of these and want to add a street food from my country, I would suggest making Salteñas, it would totally confuse them (they're also delicious and have a unique way of eating them)

      @@susysiemens6910 chicha is more of a drink for the heat, like mocochinchi, Api is a thick drink, just like how you imagine hot chocolate should be, it also gets very hot and difficult to cool down, I can't count the amount of times I burnt my tongue with it.
      Also Chicha morada is a national drink of Peru, Mocochinchi is the Bolivian one
