Who doesn't love doughnuts? How about a filled Polish doughnut know as a Pączki, pronounced (POHNCH-kee). These little pillows of rich egg dough, scented with dark rum and vanilla, are fried until golden brown and then filled with generous amounts of fruit or custard filling and then finished with a liberal dusting of powder sugar. Indulge your friends and family with these decadent sweet treats this coming Fat Tuesday or any time of the year.

I love Pączki. In a small bakery i Warsaw i have eat the best pączki ever. Tank s for the recipe.
Hello ewakobior, It is nice to meet you! That is so wonderful you were able to experience Pączki in Warsaw. Thank you for taking the time to share your kind words with us. Please let me know if you have any questions about this or any of my recipe. Thank you and have an amazing day! 🍩 😀
I'm so glad you put out a new video! I have made so many of your baked goods and they ALL came out delicious. And, I now work all my doughs the way you do, which was new to me and I'm so glad because the end result is amazing.
I will be making these his weekend...Thank you again!!
Hello Candee, I'm so glad you have found my recipe and videos helpful in your baking endeavors. Thank you for taking time to share your experiences with us.
This method looks quite simple, although there's still a lot of work and patience involved! My grandmother used to wrap the dough around the filling and somehow it didn't fall apart. The traditional filling in our family was an edible rose jam ("konfitura z róży" in polish, it's more refined and has intense flavor). Mmm that was some magical stuff.
Hello yavnrh, It is my pleasure to meet you. I appreciate you taking the time to share your memories of your grandmother and her technique for filling the Pączki. The Rose Jam sound incredible yummy! 🍩🌹😋
You are a genius!Everything I made, following your recipes, was delicious!!!Friends and family are craizy for your donuts!Tomorrow I am going to try your buttermilk fried chicken.Hurry up with more recipes!

Thank God we have a wonderful Polish Bakery nearby that sells these all year round. My favorite are the prune filled.
Hello Daniel, It is nice to meet you. Wow, you are lucky to have Pączki year round where you live. People will line up for hours in the snow, sleet, or rain in Hamtramck, Michigan on Fat Tuesday to get their boxes of Pączki. I love prune filling too! Thank you for taking the time to write and share your comment with us. Have a great day!

I enjoy watching your cooking and baking. I will try to make the Paczki Polish Doughnuts. Thank you
that looks so amazing......
Thank you so much, Missy!
These look great :) however, traditional Polish pączki are made with a bit of 95% alcohol (called „spirytus”) in the dough and fried in melted lard ;)
Hello Bullet, It is great to meet you. I appreciate you sharing the traditional ingredient and method of making Polish pączki. I think it is great we have a community of cooks and bakers who can freely share their knowledge with each other. Thank you so much for taking the time to write. Have a great day!
And definitely with rose conserve filling mmmm...... Delicious
We don't have spirytus in the US. The closest thing you can get to is Everclear. Other than that, rum, whisky, or vodka can be substituted if Everclear is not available to you. They do the same job. And, yes, some people will fry them in lard, but now it's not that popular to do. Don't feel you have to. Use what works.
That was amazing as usual.. and welcome back 👍🌹
Hello Buchee Cafe, Thank you so much!
Fabulous !!! Love how you didn't try to re roll the scraps. What a great idea ... reminds me of a bear claw. Thanks Alejandro. You are a master at your craft.:o)

Hello GI, Welcome to the "Just One Bite, Please?" community. It is nice to meet you. Please let me know if you should have any question about this or any of my other recipes. Thank you for writing and have a great day!
Great recipe....any recommendations on the oil? Would grapeseed or Peanut or sesame oil impart too much flavor? Thanks (I don't bake too often)
Hello Gregor, I would recommend using a flavorless oil like peanut, grapeseed, or canola for frying the pączki. Please let me know if you have any other questions.
@@JustOneBitePlease
Hello,
THIS looks delicious. Since Fat Tuesday/Thursday is coming up, I ALWAYS LOOK forward to having Pączki, BUT NOW I might make my own!! BTW , thanks for giving the pronunciation as I've heard it pronounced about TEN different ways!! Rhymes with "John-shkee", correct?!😀
@@JustOneBitePleaseGreat video. Actually traditionally you should use pork lard - nowadays we use 50/50 combination of canola and lard.
Fat Thursday used to be last occasion to eat and use up (before it spoils) all that was prohibited during lent - that is why original donuts were savory - meat filled, made with lard and with very eggy dough - sugar was rare those days. In time donuts became sweet. Also the most traditional filling is rose hip jam. Also strawberry jam and advocat flavoured pastry cream are amongst more popular flavors. Traditinally there is also around 40% less filling than what's on your video. Also in most donut recipes rather than rum we would use flavorless high content alcohol (it's added not for the taste but to keep the dough from absorbing too much fat during frying - don't know how effective it actually is). Also frosting (icing sugar+water/milk) with candied orange peel is as popular as powdered sugar.
Looks like an amazing recipe!
Would you ever consider doing a fluffy pancake video?
Hello Elizabeth, Thank you for your kind words. I do have a recipe for fluffy pancakes on my list for videos this year. I am currently in San Diego, California working as a consultant for a new bakery and a new restaurant. I will start producing new videos when I return home in April.
Just One Bite, Please? Thank you for your reply. I’ll be looking forward to your future videos. Blessings on your endeavors in San Diego!
wow!! 😲
it's really fantastic 💜
Hello Kitchen driver, Thank you so much!
Did you do anything special with the extra dough pieces? Could they even have some fruit folded in before the final proof and be made into a type of fritter? Great video!
Hello The Heimburger Cooks, It is nice to meet you. Yes, I pinched and formed the scrapes into a rectangle and divided into 6 pieces. (see the video time stamp: ruclips.net/video/57Tnz_Alfyc/видео.html ) You definitely can add fruit like apples or pears to the dough to make fritters. If you use a wet fruit like cherries or berries it can cause the fat to splatter and pop when you fry. Please let me know if you have any other questions I may help you with. Thank you for taking the time to comment and ask your question. Happy Baking!

do you make your fruit filling? Thank you for this lovely recipe.
Hello Missy, Yes, I make the fillings from scratch. My recipe for Fried Fruit Hand Pies has a basic cooked filling recipe that you can use for other fruit also. Here is the link: justonebiteplease.com/2016/06/10/fried-fruit-hand-pies/
Pleas let me know if you should have any questions. Happy Baking!
The best filling is Rose jam. If you have "hard fruit jam" - block , you can put it inside befeore frying.
Hi chief, i just dont understand what different about ferment n proof. I usually mix dry ingridient first n liquid at the end. ( never mixture yeast n water ). N i never ferment dough, just resting n proof 1 hour. Thank you
Hello Muhammad,
Fermentation starts the moment the yeast hydrates and comes into contact with its food source (flour). The dough is "Bulk Fermenting" until it is shaped into the final shape and then it called "Proofing." The dough needs to "Prove" it is ready for the oven by growing to the optimal size before being baked.
Mixing yeasted doughs varies based on the recipe, the method of mixing, and one's own personal preferences. My method is a two-step method.
First Step: Combine the liquid ingredients, yeast, (other ingredients like sugar, eggs, honey if called for) and half of the flour and then beat together to make a thick batter-like consistency.
Second Step: Add the remaining flour and salt to the batter mixture and folding and stirring to get a shaggy mass before turning out of the bowl to hand knead.
I still use this method with stand mixers to ensure the ingredients are full combine before kneading in the mixing bowl with a dough hook.
Please let me know if you have any other questions. Thank you for taking the time to share your question with me and the Just One Bite, Please? community. Have a great day!
Just One Bite, Please? Thank you so much.
Can i use a kenwood mixer for making the dough? Thxx
Hello Joop, Yes, You sure can use a stand mixer to knead the dough. Please let me know if you should have any other questions.
Hi ...I had a doubt ...how do you store the donuts ..because I have noticed that after some time ...the icing sugar coating disappears and becomes a sticky mess ...anyway to avoid that ?
Hello Charishma, The doughnuts are best within 2 days after they are made. If you want to make and store them for later I would recommend wrapping in plastic wrap and freezing the doughnuts after filling (fruit filling only) without the powder sugar. Thaw the doughnuts at room temperature and reheat on a parchment lined sheet tray at 350℉ (176℃) for 6 to 8 minutes to crisp and dry the surface of the doughnuts before sprinkling with powder sugar and enjoying! Please let me know if you have any other questions. Happy Baking!
@@JustOneBitePlease thank you ..that was very helpful..I really appreciate the fact that you took time to reply back 🙏
Would this be a straight dough method?
Yes it is. Please let me know if you should have any questions. Happy Baking!
Could this dough be used for cinnamon rolls also?
Yes, it can!
My mom made something like this and fired it in a pan with lard and water would you know what they were ??
Thank you! sounds delicious!
Hello Ma, Did you get a chance to make the recipe?
Oooh que rico
Con esa misma masa se pueden hacer donas ??

As the baker you get to "sample" as many as you like just to make sure they are good. 🍩😋
Sry sir can you tell me what oil do you use it please? Or shortening?
I used canola oil. You can use any oil you would like. Traditionally lard is used to fry the Paczki.
Just One Bite, Please? Canola oil don’t make rancidity in doughnuts? When i left in room temperature?
It takes a long time for canola or vegetable oil to go rancid at room temperature.
Just One Bite, Please? Thank you very much sir. You help me a lot to consider an oil ^^
These look awesome :)

I always thougt bread flour for this bc here on youtube 95 procent of this polish donut are made with strong bread flour! Thxx
Hi Joop, It is good to meet you. Using All-Purpose Flour rather than Bread Flour produces a much more tender Polish Doughnut. The dough will be very sticky at the beginning of this process but will gather strength as you continue through the steps. Please let me know if you should have any other questions you may have. Thank you for taking the time to write. Have a great time baking!
Can u add the ingredients in quantity... It will help full for us to try... As we from India live to make donuts and also can u tell me without alcohol and even if u have eggless recipe... Would be great chef 👍
Hello Sheeba, Here is the link to the full recipe and detail directions: justonebiteplease.com/2018/01/25/paczki-polish-doughnuts/

Dude these are delicious. Like super delicious... but theyre definitely ponchki shaped churros xD. The dough for ponchki (excuse my spelling plz) is much heavier, these were light and airy.
I want to reiterate, these are the best damn churro based dough I've ever had.
Hello CanadianHoneybadger, It is nice to meet you. You bring up a good question. Yes, there are similar ingredients in the recipes but the Pączki recipe is an enriched yeast dough that needs to be fermented and proofed before frying. Where a Mexican churro recipe is a Pate a Choux (Milk, Water, Butter, Salt, and Flour cooked in a pan and then whole eggs are beaten in) The batter is piped from a pastry bag directly into hot oil to fry. Baking is interesting in that with variation of proportion of ingredients, techniques, and process we can create something completely different. Thank you for taking the time to write and comment on the video. Have a great day!

I made these exactly to your recipe but they came out a bit dry... any idea why?
Hello emmyjay53, It is good to meet you. Could you tell me if you measured the recipe by volume or by weight? This will help me understand the variables that could have resulted in a dry Pączki.
Hi I weighed everything as in your recipe. I think there were not enough eggs. When I look at other Pacski recipes they suggest more eggs. Do you think this is the problem? Anyway, thanks for your recipe
Hi emmyjay53, I am more than happy to help evaluate what caused the dough to be dry. I do have a couple of questions for you.
• Were large eggs used in the recipe? Each egg weighs about 56 grams (56 g. x 3 = 168 g.) The eggs and milk together weight 508 grams (168 g. + 340 g. = 508 grams) This makes the dough hydration 70% and this is not including the rum.
• Was the dough moist and sticky when you first started to knead it like in this portion of the video? ruclips.net/video/57Tnz_Alfyc/видео.html
• If the dough was sticky was any extra flour used during the kneading process to help it not stick?
With your answers, I'll be able to understand what variable could have affected your outcome.
Please, can you give how much sugar, milk etc or how many eggs or others you use in recipe detailed? Thank you
