Do you bake you gourmet caramel corn after it comes out of mixers? Or do you just stir as it air dries. I feel like its a crispy less chewy bite if i put in oven. But sure would like to eliminate that step. Just not sure how to keep crisp without oven.

How is it that all of the home recipes for caramel corn tell you to bake to make the corn crunchy and last long, but I never see ovens in the popcorn shops?

Right after cooking with your caramel, you do the cooling process. And in the cooling process, you should swipe the caramel popcorns back and forth. You have a small window to do that because the caramel is thick-ing and drying. The idea is to separate each of the beautiful popcorns before cooling. Hope this helps

You don't need all of that equipment to make "real caramel corn". You're right about that glaze crap though.

i don't dislike the video but the info is coming out wrong. the basis for caramel is sugar and corn syrup. brown sugar is made from molasses but the recipe you gave is closer to making rum
