This was awesome. The only changes I made was to put the raw meat into a bread pan to initially cook. Rather than put into oven after slicing, I fried them in a pan. Paired this with Chef John’s homemade pitas.
This looks good. I like to cook it in a baking dish and let it cool in the baking dish because I usually don’t serve it all at once. That way the grease will stay in the meat as it cools, then I slice it cold again and store it that way and then I can just cook it like bacon in the frying pan when I’m ready to use and The fat frying with it is the original flavor. The more fat the better it freezes also. Are usually do half and half ground beef and lamb which has plenty of fat in it so I don’t need the bacon but I might try it sometime, it sounds kind of good.

there's no juice if you don't skip the missing step of, take out the ground up onion from the food processor and strain all the liquid out through a white tshirt or cheesecloth if you have one. then put the onion back in and mix it up with the meat and herbs and salt & pepper. Dunno why this rich lady is using cumin and oregano. that's not greek. use rosemary, marjoram, salt and pepper for a real gyro meat recipe... No idea what this lady is trying to do here.

Universally recognized? I’m gathering my list for my instacart and want to know if this is what is needed to get that great flavor of the gyro.
Oh nooo this is not how it is made. This is just an easier way to do this, and I’ve been to Acropolis too, they make it an actual Greek way. I don’t recommend this way, this isn’t actually gyro it’s just ground lamb in the oven.

Hi Imani. If you don't want to use pork bacon, you could use beef bacon. Or just use ground beef / lamb with a higher fat content. To replace the smoky flavor, you could add smoked paprika (I'd start with a 1/2 teaspoon). Hope that helps!

Definitely the classic cart flavor! There are enough spices here that the bacon is more about adding the right amount of fat than taking over with smoky flavor.
You mention "meat mixture" but you never mention the ratio... Even on your website, it's either/or; not a mixture. I use half 80/20 beef and half ground lamb, for instance.

This "Meat Loaf" method works pretty good. I use a bread baking pan to catch all the juice that this produces while baking in the oven.

Sorry, you lost me at bacon. I ground my lamb and beef and make an approximate60/40 mixture. I never have a problem with fat.

Good recipe but I would recommend avoiding use of aluminum foils - not good for the body.
