    I did it!!! Yay!! I watched yesterday..gathered my ingredients today(used frozen fruit) and I did it step by step with the video.. I don't have a canner but I used the helpful tip of putting a towel in the bottom of the pot!! It turned out beautifully. Now Christmas Jam will be given as a special gift this year.

    One year for Christmas gifts I made jam, bread and fresh ground peanut butter (from Whole Foods) and gave them in nice baskets. It was affordable and personal.😋

    I agree. My daughter n I made strawberry jam for her clients for Xmas. If she doesn’t do jam they ask for it. Lol😊

It seems like everything here in Canada is more expensive than in the US but I know based on the cost per jar, which includes the price of the new jars these little treats are still under $5.00 each.     Excellent idea! I appreciate the extra tips. I never knew about stirring the jam after its cooked, so the fruit wouldn't go to surface, but it makes sense.
    The presentation ideas are great. I do the small bag, but never thought of the baking boxes
    I make fresh cranberry sauce every year and give to some family and friends. Ideally it must be used at Christmas.
    I use half the sugar required and put orange extract for flavour. It's a favorite, but a bit tart. My diabetic neice appreciates less sugar. . I don't boil bath because it gets used within a week pr so.
    However, I make a few extra jars and refrigerate them because we so enjoy cranberries on toast or pancakes.

      Thank you for your comments, I appreciate that you watched this video. It sounds like your cranberry sauce would have some of rhe same flavors as Christmas Jam with the oranges and cranberries.     Great idea & looks delicious. I don’t have a canner so I am a bit confused about the towel in the bottom of the pot & all. I’ll figure it out unless someone here can help or if you could help … it would be great!

      Hello Renee, If you already have your jars pull out you biggest pot and stick a jar into the pot. Does it look like there would be enough room in the pot for water to he over the top of the jars when the water is boiling? If so this pot would work. We place the towel in the bottom of the pot when we fill it with water so that it acts as a barrier between the bottom of the pot and the bottom of the jar. We do that because when the water boils it causes the jars to lift and then they bang back down on the bottom and they could break. Does that help?

    Awesome video colleen I am going to try to make this jam I’m not having much luck with jam it’s really watery and I made it this past summer and that was my first try at making jam but someone told me I never added enough sugar and yes I will admit I did cut back on the sugar because I thought it wasn’t healthy but what the heck at my age I want some good jam

      Hello Janet, when making jam its important to follow the directions of the pectin brand you are using and sugar mixed with the pectin makes it set. Yes, its a lot of sugar but this jam can really use it to balance the tartness of the cranberries and lemon juice. I hope you try it and that it turns out great for you. Best wishes, Colleen

      There is a brand of pectin that you can use if you want to adjust the sugar in homemade jams. The brand is Pomona' Pectin. It is a bit complicated so follow directions carefully. The jam will not last as long after opening because sugar is also acting as a preservative. Keep trying, home canning is so rewarding.

      Hello Sharron, to use powdered pectin you need to use 4 1/2 cups of prepared fruit including the 1/4 cup of lemon juice, and 4 Tbsps or one package of fruit pectin to a boil and bring it to a boil, the add the 7 cups of sugar and return to the boil and boil hard 1 minute. Cheers, Colleen

    Can you just mash the strawberries where there are some small strawberries chunks? Would that be alright ? When I was a kid you could buy strawberry preserves and there would be actual strawberries in it.
    Also wanted to ask. What about using a steam canner instead of actual water bath. At 74, that thing is getting too heavy for me to lift, don’t have anyone to help.

      You absolutely cqn leave them in bigger chunks but I would blitz the cranberries first and then mash the strawberries because the cranberries are quite hard. Thanks for watching Florence. :)

    So was that 1 envelope of liquid pectin? How much dry pectin would that be, please?

      Hello Bettyann, Yes, that was one envelope of liquid pectin and that would be equivalent to 3 tablespoons or one package of dry pectin.

    Hello after you put the liquid pectin in you don’t have to put back on the stove for a minute or so like the powder d pectin. I can hardly find the liquid here in Juneau Alaska.

      Hello Alfreda, No, you don't have to put the pot back on the stove once you add the liquid pectin. You can definitely use powder, just follow the directions on that comes with your pectin for making cooked strawberry jam. Does that help?

      Hi, You need a non ionized salt salt. You should to be able to buy canning salt at any good grocery store.

    But NOOOO!!!!! NOT MY JAM! ... *sob* Not My Jam, .. *whimper* not my jam, ... please?
    Whew, ... I'm so easily "triggered" AGGHHH!!!!!
    Looks like it's snowing there.
    I googled Banana Jam and found a couple of recipes that I'm going to try. One with OJ and the other with Pineapple. Turns out you must lower the PH so the Bananas will work as a Jam. Go figure.
    So! The next time I see a pile of discounted Bananas I know what I'm doing. I saw some discounted bananas last week but didn't feel like dehydrating them so I didn't.
    But this Banana Jam now, ... that's a different story.
    We had a box of peaches that were not tasty until I turned them into a spiced Jam with Cloves. Who woulda thunk it?
    The stand up freezer quit during the Hurricane and I made pints of Tame Strawberry Rhubarb jam that turned out fantastic. I was crazy stressed trying to keep it all together and so pleased that it worked out OK.
    No one, gets my Wild Strawberry Jam, ... No one. Except Mum. It's her recipe and god bless her but she picked Wild Strawberries all her life so her kids could have Jam. Now I make sure she has this special Jam.
    I only managed 20 half pints of Wild Strawberry Jam this past summer and suddenly "someone" has taken an interest in it and a half pint last two servings on ice-cream, ... so I hide it.
    That Wild stuff is for Mum's morning toast, (lasts a week and a half or more for Mum) not ice-cream, ... use the Tame Strawberry Jam for that. Not my Wild. Or use the Blueberry, got lots of that, and I managed 44 half pints of Wild Raspberry Jam this summer. But that's not good enough it seems.
    There's a local fisherman who drops us off Halibut and Lobster for free so he gets a case of assorted Jams every Fall as a thank you.
    Then there's my sweetie who shares her goodies with me so I share my Jam with her, ... she's a lucky lady. But of course, I'm a lucky guy.

      Hello, and thank you for the wonderful stories that you've told about your jam it's amazing what we can do with some fruit when we just put our mind to it. Or we can dig out our canning books and see what other people have done and I've made some wonderful jams using other peoples recipes. But wild strawberry jam takes a lot of commitment from the people who are picking it and yes I can completely understand why you would hoard it or hide it because it becomes a very precious commodity when you know all the work that's gone into harvesting the berries.       The Banana Jam turned out fantastic, if I don't say so myself.
      It's an old fashioned sugar jam as well so I'm not really worried about shelf life or the "B" word! (Botulism)
      And there's the juice of a lemon as well (three tbsp) I'm good with the PH and the sugar just wraps it all up.
      I sterilize jars and water bath for a good seal and one pint didn't seal so that's how I know it's good.
      I was thinking the Pineapple might over power the taste but not at all. It's the Banana that does the overpowering.
      I'm not even going to try the OJ recipe, I like this one so much.
