    Nice video Jay. Got my paddle strop, and now I have to practice. BTW, I notice the paddle strop has a suede side and plain leather side. Is there a different purpose to each side?

      Hi David. I fine the smooth side best for the finish. If the blade has any slight burr I’ll use the suede side (rare) but I believe the smooth works best but the other side works just don’t press hard on the suede side as you have a higher chance of dulling your knife than polishing it😎

    Jay, Thanks for the great videos. I now have 2 Hone sharpeners (I like to use 2 edge blocks when sharpening my long Chinese cleaver.) I was just wondering where do you place the knife when using the Bess Tester fulcrum? Should the knife tip rest on the fulcrum?

      Hi Steven, I usually do several tests near the 1st 3rd and rear center to see if the apex is consistent. There is no “exact location” so you can test anywhere. If you sharpen it correctly you should get similar BESS scores across the entire apex. I’m usually in the 110-120 range if I take my time.

    Is stropping the same as using the wheel on your tormek 1

      Hi there. No that is a honing wheel. Different purpose for deburring your blade edge after using the diamond wheel.

    Hi jay! Thanks for these informative videos. Newbie question here. When would you want to use compound vs a bare strop?

      My pleasure. A plain leather strop is fine for most average kitchen users. The compounds are used to get a higher polish on the bevel. Hobbyists use a lot of different compounds but for someone just sharpening knives, you will be perfectly fine and razor sharp with one of the standard strops in my Amazon store which are fantastic and reasonably priced.
