- Will Horowitz of Ducks Eatery stopped by the MUNCHIES Test Kitchen to show us how to transform watermelon radishes into a vegan alternative to bresaola. After brining, smoking, and dehydrating the radishes, the result is smoky, salty, and slightly sweet flesh. Thinly sliced, it’s the perfect addition to a simple salad.

If you really cooked you would know that is a small amount

I'm not a vegan nor am I defending veganism but I don't think butter has any place in a vegan alternative to anything. That's partially why I'm not vegan. I love my butter.

Maybe it is the color balance but that brown butter definitely looked burned, cool concept tho. Wonder if you can substitute the smoking with liquid smoke during the brine.
Liquid smoke is god awful in comparison to natural smoke. That's like adding processed cheese instead of fresh mozzarella to a pizza.
Yeah when I first saw the butter I started yelling at my screen "why do you still have that pan on the burner!!??". IMO it was looking more like black butter, but I hope your color balance theory is right and it just looked darker in the video than it really was irl.
