    📜 Ingredients for 26cm baking form:
    7 eggs
    160g (5.5 oz) flour
    150g (5 oz) butter
    120g (4 oz) powdered sugar
    120g (4 oz) white sugar
    150g (5 oz) semisweet chocolate
    2tsp (0.32 oz) vanilla extract
    1 pinch salt
    350g (12 oz) apricot jam
    For glaze:
    100g (3.5 oz) dark chocolate
    150g (4 oz) sugar
    80ml (3 fl oz) water
    Separate yolks and whites into two bowls.
    Add salt to egg whites and beat them into a foamy mixture while adding white sugar.
    Melt the semisweet chocolate over a bain-marie.
    In another bowl, whisk together butter with powdered sugar. Add egg yolks, one by one, and vanilla extract.
    Pour melted chocolate in the mixture. Add beaten egg whites and gently fold into the mixture. Finally, add the flour and stir.
    Add parchment paper to the bottom of the baking form. Smear the form with butter and dust with flour - there must be no spot that isn't covered with flour, otherwise the batter would stick.
    Preheat the oven to 180°C/360°F. Pour the batter in the baking form and bake for 45-50 minutes on the lowest rack.
    When baked, turn the cake upside down, remove the form and cut it into two layers. Warm the jam and brush the top of the first half. Place the second layer on top of the other and brush the top as well, including the sides.
    To make the glaze, put sugar into a saucepan with 80ml (3 fl oz) water and boil over high heat for 5 minutes, until the temperature reaches 112°C/230°F. Remove from heat, add dark chocolate and stir. Let cool for a few minutes.
    Pour the glaze liquid at once over the top of the cake. Spread using a palette knife, if needed. Let cool for a few hours.
    Serve garnished with whipped cream.
