  • This cuban pulled pork recipe is super easy and perfect for summer when it is just too hot to turn on the oven or stove. All you need is an instant pot and a rice cooker, which don't give off much heat at all. The dish has an amazing citrusy and slightly spicy sauce with added depth and dimension from the cumin and caramelized brown sugar. I dare you not to like it!
    I love to meal prep this dish on Sunday and use it throughout the week to make wet burritos, pulled pork tacos and sandwiches, huevos rancheros, and even layer it over spinach to make cuban mojo pork bowls. With a little creativity the possibilities are endless!
    PRO TIP: Freeze your extra sauce into cubes for a quick and easy way to add flavor to soups, rice, beans, quinoa, potatoes, meats, veggies -- basically anything you want!

    INGREDIENTS:
    4lb Pork Shoulder/Butt Roast
    1/3 C Brown Sugar
    1.5 C OJ
    1/2 C Lime Juice
    1 Bunch Cilantro
    2 Green Onions
    1 tsp/cube Chicken Stock Powder
    2 tsp Cumin
    1 tsp Oregano
    1 TB Cornstarch
    Optional:
    1 Jalapeño
    1 Bay Leaf
    Peppercorns
    1/2 tsp Cumin seeds
    Instant Pot: Pressure Cook on HIGH for 1 Hour
    Crock Pot: LOW for 8 Hours or HIGH for 4 Hours
