Thanks for the video, though are you able to tell me if its possible to have an image (that's been captured via survey123) pop up when that site is clicked on, like you show here with the data table? Thanks.

This is possible using a pop-up which is configured in the web map. doc.arcgis.com/en/arcgis-online/create-maps/configure-pop-ups-mv.htm

I wish esri would include a link to the slides in the descriptions for these videos.

Especially because the presenter says like "a slide presentation covering the concepts should be available as well"

I am trying to put data from a survey question into a dashboard via a serial chart, however the question I want to insert is multiple choice. When I view the data in the survey itself you can see it displayed correctly (how I want it to look in the dashboard) however, when I put it in the dashboard it creates a separate "bar" for anyone who selected more than one choice. Is there a way I can combine the bars so it displays like in the survey

Sorry, we would need a bit more information. You may wish to visit the Esri Community - ArcGIS Dashboards and look for an answer there or post your question where folks can possibly assist: community.esri.com/t5/arcgis-dashboards/ct-p/arcgis-dashboards

You may want to try to "fix the list of layer" in the webmap. I'm assuming the layers you are interested aren't showing in the correct order, or may be missing some layers.

Is there a way to have the indicator change as the map changes?

Yes, this can be done using a map extent filter. doc.arcgis.com/en/dashboards/latest/create-and-share/configuring-actions-on-dashboard-elements.htm#ESRI_SECTION1_A8948E0885C244B1B28D7BD8B4E86166
