caipirinha: cachaça, sugar, and lime. Cachaça is a Brazilian "Proto" Rum. It is a great flavor that is unique and very similar to the Daqueri. It is just great and is always a nice start to an evening by the pool. 2 oz cachaça, 1 oz simple syrup (demarara), 2 oz lime juice. Put the lime cut into wedges into the glass with crushed ice and shake. MMMMMM MMMMMM!! Enjoy.
Hooooly crap, 2oz of lime? That’d be so sour! It’s all preference of course, but I’d suggest cutting it back to equal parts sugar and citrus. You’ll taste the flavor of the Cachaca more too :)
Corn and Oil. I remember the first time I made myself one. I'd made a batch of Falernum for other tiki drinks, and looked around for what else I could use it for and found the Corn n Oil recipe. I took my first sip and thought "good grief, that's the worst drink I've every had!" In fact, it was so bad, I had to take another sip just to be sure. The second sip was pretty bad, but maybe not as bad as I'd originally thought. The third sip, I thought, "well, it's not good, but it's really not that bad..."
By the time I finished the whole thing, it was my new favorite drink.

I do love the corn and oil. I use El Dorado (5 year) for mine and they are great. And yes I know that it is not a Barbados rum. I did try making one with the El Dorado (8 year) thinking that upping the rum would up the drink and it is just not the same. I will have to try it with a couple Barbados rums I have around but try it with the 5 year El Dorado and I think you will like it.
You were right, Spike. From the translation of the King James Version of Joel 2:19, "Yea, the Lord will answer and say unto his people, Behold, I will send you corn, and wine, and oil, and ye shall be satisfied therewith: and I will no more make you a reproach among the heathen:" Other translations don't specify corn (grain). I really enjoy the Corn & Oil. I typically use Kaniché XO and enjoy the corn notes.

I love a daiquiri too! Another 3 part cocktail I love is a Rum Ting. 2oz of dark rum, 1/2 oz falernum and top up with Ting ( a Jamaican grapefruit soda).

The original/authentic Jamaican version is Wray & Ting which is Wray&Nephew with Ting and a lime wedge
Yes, Wray and Ting is the original, but like the Daiquiri, using other Rums to your own taste still makes it a great cocktail. 😋
Pretty good coverage of the three cocktails. Those were all good Daiquiri rums (Denizen 3 is another good option). But Probitas (“Pro-Be-Taaaas”, rhymes with Veritas - the name of this rum outside the USA) is the best.
There’s a ton of added sugar in the Plantation 20th Anniversary rum, so isn’t a great representative of typical Barbados rums that don’t have added sugar. But it certainly has its fans.
What do you think of El Dorado 3 for Daiquiris?
"a ton" = 24g/L, so 16,8 g in a bottle of 700ml.
An adult should not ingest more than 24 to 36 g of sugar per day, so unless you plan to drink the whole bottle in one day, I think sugar is not the bigger concern here.
Also, there is 14 g of sugar in 1 oz of simple and there's 1,44g of sugar in 2 oz of this rum.
So I don't think it make a huge difference, just depends on the palate of the drinker.
If you want to be accurate, Daiquiri should be made with Cuban rum and not Barbadian anyway, so I would suggest "just drink whatever you prefer to".
@@Kevlar830 24G/L *IS* a ton of sugar for a rum. I didn't suggest a Barbados rum for the Daiquiri, I was mentioning that Plantation XO is not a great representation of Barbados rum in the cocktail it was used for in the episode, the Corn n. Oil.

This is the beauty of Tropical/Caribbean/Island cocktails. Some self-serious nerds even call them "Tiki-adjacent" 🙄 although most pre-date Tiki. The old Caribbean (Jamaica and Barbados and others argue over the originator) saying of "One of sour, two of sweet, 3 of strong, 4 of weak" where the weak of ice replaces water has lead to some uncomplicated but excellent cocktails. Personally, I'd keep the sugar syrups for Tiki cocktails and Ti' Punch and would use super-fine granular in the daiquiri. There is something with the cloudy drink and the soft grit of sugar that makes the original, or at least El Floridta's daiquiri special. Heck you can even get down to 2 ingredients with a Mauby Fizz and Rum or Wray & Ting which taste a lot more "complex" than a simple rum & coke LOL

Poured one! Even had the Plantation XO (love the whole line of Plantation rums...). It's quite good! Simple and tasty. But as my wife pointed out, it tastes a little bit like Coca Cola. 🙂 The Smugglers Cove recipe calls for 2-4 dashes of bitters, and I did 2 (4 dashes seems like a lot in a 2 1/2 oz. drink). One might be fine, even. I note too that the recipe on the back of the Velvet Falernum bottle doesn't include bitters. I think the bitters really add, personally. Anyway, thanks for another good one, Spike! 👍

Just found your channel. I love Probitas in a daiquiri. It is now my default for a daiquiri. Some countries market it as Veritas.

Plantation isn’t a 20year old rum
It’s the 20th anniversary rum, I believe was for the master blender or something like that

The Ti' Punch is another amazing three ingredient rum cocktail:
Roughly two fingers of Martinique rum agricole
A bar spoon of Martinique sugar cane syrup
A quarter size coin of lime
It's another one where the rum is super important, as is the secondary ingredient. It's so simple and so drinkable.
Corn ‘n Oil sounds awesome. Gotta try it at a few different places to try different versions.

I've made something very close to that corn & oil drink which is the same 3 ingredients but with ginger beer added. Why? Because I love ginger beer. Try it. I made mine with Don Q Gran Reserva 7 year gold rum but that Plantation XO you're using works great as well. Cheers! ✌😎

Great episode but I lived in the Virgin Islands a couple of years and Puerto Rico almost as long. All the English speakers I ran into referred to “Barbadians” as Bajans. Just thought you should know. Add some more Windward Island cocktails to be more inclusive in the Tiki community. I’d be happy to see it as Patreon content. Great episode.
"Inclusive"?🤣 There are Tropical and Caribbean cocktails and there are Tiki cocktails. They are not the same. Mojitos, Pina Coladas, El Presidente, Daiquiri, Pain Killer, Rum Punch, Cuba Libre are Caribbean. Maybe you should look for a Caribbean Cocktail RUclips channel?

The original Cuban daiquiri rum was the O.G. Bacardi. PS Hamilton White Stache is the best, most correct rum for daiquiris and mojitos. PPS Jeff Berry suggests making a “cold” simple syrup…not heating the water, just shaking the sugar in cold water until it dissolves.
Yeah, I realized that Bacardi was probably the Cuban rum after the video went live 😵💫🤷🏻♂️
@@BreezewayCocktailHour the three classic Cuban rum brands are Bacardi, Matusalem, and Havana Club. The first two escaped seizure of their trademarks. Now…if you feel like going on a mission, try to find Diplomatico Planas which is another throwback Spanish style white rum at a generous 94° instead of the common 80°. Not a bad deal at $22ish here in Miami…

Wow! What an episode once again, thank you Spike! The drinks here are simple but the whole video made me want to comment so many things that I had a hard time watching it to the end (twice) before writing my comments 🙂
1) I hate Goslings for their patent thing and taking legal action because of "wrong rum" used in the Dark n' Stormy. I will never buy any Goslings product.
2) I was first introduced to the Daiquiri just two months ago. Since then I have made quite a few of them, I really like them. I recently even did a test with all the light rums I have (using same ratios as you): Plantation 3 Star, Flor de Caña 4 and Wray & Nephew overproof. The Plantation was by far the best one. It was perfect, 10/10. Flor de Caña was the second best, but not very good. I'd give it a 7,5/10. Wray & Nephew... well... just say no. Skip this one. 3/10 at the most. Two other rums I did the Daiquiri with: Plantation Pineapple (9,5/10) and Plantation Isle of Fiji (9/10). Both very nice! I used demerara syrup in these last two.
3) I heard good things about the Probitas from other RUclipsrs as well. Hoping I will get access to it at some point over here. Of course also looking forward to the Hamilton range at some point, but we can only dream of those over here in Europe... not to mention Finland in particular.
4) Too many slow motions in one video is not good. You were almost too close to the limit in this one, sorry.

Love a proper daiquiri, it was my go to for most of the 2010s. This decade I've moved to a Boulevardier for some reason... but my dude, you're making a cocktail not candy. 2 : 1 : 1?! Cut back that simple. 2 : 3/4 : 1/2 is more like it. However if you do enjoy it sweet, I'm not going to tell you which side of your bread to butter.

If you really appreciate bottle design and you like that Plantation XO (which I agree is a fantastic design (especially the cork)I highly recommend checking out Mocambo 20 year aged black rum. Look it up if you haven't seen it, and I have little doubt you'll be blown away (and the rum itself is truly amazing). Personally, I view it as more of a sipping rum than a cocktail rum. Speaking of which, I'm curious - do you ever sip rums neat or on the rocks or do you strictly drink rum in cocktails?
I have a couple of rums I sip. Also, a couple of rums I shoot. Trouble always ensues.
I try to keep to only drinking rum in cocktails, but I do like a nice rum for sipping once in a while.

Plantation pineapple makes a great daiquiri, however i use less sugar to lime.

I like how you stress the accuracy and copyright associated with Gosling's Dark & Stormy and how it isn't a true Dark & Stormy without adhering strictly to that formula , then you turn around and add the caveat that some people like to add a 3rd ingredient which you'll be showcasing in the video. I mean, you might as well just buy Gosling's official Dark & Stormy in a can (they come in packs of 4 and taste great) if you want the copyrighted original cocktail - that way, no need to measure out ingredients and it comes just the way Gosling's intended it. But add lime juice to that and gasp! Better pray you don't end up in court. Personally, I like to make my own variations on the cocktail using whatever black rum and ginger beer I have at my disposal and since I make them for myself at home and don't call it a Dark & Stormy there's never any need to worry about getting sued. Anyways, thanks for this video, I love simple but delicious cocktails! 👍
When it comes to daquiri's, why not just mix limeade with white rum?
I mean limeade is just lime juice with sugar and water anyway.
Supposedly this is the recipe that Jackie Onasis used for Jackie Kennedy's favorite cocktail: the daiquiri. Except it was canned liemade. The answer is if it's a off the shelf mix or frozen can it's full of other crap and too much sugar. But hey, some people really like the bar at Applebee's

Mon! LOL - Barbidians??? Wha Manner Of Nonsense Is Dis Mon? Excuse me, but FYI - the people of Barbados will always be known as "BAJANS'...(Bay-Jens).
And in the 13+ years I lived there (1970 to 1983) , co-owned (the most famous club in the history of the island/West Indies) Alexandra's, and was close with every major bar & restaurant owner on the island, as well as the Prime Minster, and the Ward family (Founders of the world's first proper Caribbean rum distillery - Mount Gay - in 1703), I don't recall ever hearing of a (local Bajan) drink called Corn & Oil. It was never mentioned or asked for in any bar on the island in my time. (Sounds more like a ting from Trinidad!)
What most everyone concerned with proper daily cocktails really drank across the British West Indies was a 'Lime Squash' - which is essentially a colonial British Daiquiri. And BTW - the one you made here was properly done.
In the common lingo of Barbados, and because of this common popular drink, the primary local term for relaxing or having a good time is referred to as "Lime'n Out" (Limeing Out).
DM me if you want to learn more of cultural foundations in that part of the world, where authentic rum was basically invented.
And I love enjoying Alexandre Gabriel's fine Plantation 20th Anniversary Rum (Primo Cork!) as much as any true pirate, - but the most down home representative/ambassador of classic Barbados rum distilling traditions is probably Richard Seale at Foursquare.

Not to get pedantic, but a “true” daiquiri should be made with granular sugar and not a simple syrup. Caster sugar (a popular Latin confectionery sugar used in merengues) works excellently as it is finer than granular sugar but does not totally dissolve like a powdered sugar, or leave large granules like standard sugar. Of course you would need a Cuban rum, but White Stache, Hamilton Puesto, and Probitas are excellent rums… but it just has to be granular sugar to be an authentic daiquiri

Slo-mo might look good but doesn't suit the style of your show at all. Energetic upbeat talking, cut to dramatic slow motion for a couple of seconds, then back doesn't go together.
