I'm from Guadalajara, México and guajillo dried chiles is a fundamental element of a really authentic and suprime chilaquiles, although i respect Andy's recipe, i will try jalapeños on My chilaquiles next time.

Plus she wouldn't have cooked them so dark but other than that yummy We only got an egg if we ran out and found them for her. The one hen was mean but that was worth the price lol. Oh she made it with salsa verde too depending on whats in the fridge and garden lol I miss my Tia

My father was Mexican and he used to make me chilaquiles. It is heartwarming to know that everyone around the world also loves this humble Mexican dish.
Perfect chilaquiles! The only thing I do different is that instead of triangles I cut the tortilla into small squares, that makes them more easy to eat and fry :) btw regards from Mexico ❤️
He did it all wrong I never seen anyone put that red sauce in it. It’s a breakfast meal so you add eggs and cook the tortillas in the eggs and add cheese idk what Mexican thinks this is real chilaquiles
Mexican here, I'm amazed you got this done perfectly. My suggestion would be to also try a green salsa and add shredded chicken 👌 To reach perfection eat it with a bolillo (small baguette 🥖).
Who know how long they discuss this in the background before they film?? You really think they are just spontaneous and always have all the ingredients they need on hand, that being said if Andy was always there to cook for me I think I could become less indecisive
Great. Chilaquiles is an amazing dish and I really like the pickled onion (looks like it) you added. i could see how it would cut through and brighten up the dish. But you did a great job keeping it strait forward and uncomplicated because it is a comfort food. it doesnt need to be cluttered with extra fluff that takes away from the fact its a cheap easy meal with readily available ingredients. that being said, you should try chilaquiles verde. basically the same thing subbing for tomatillos and roasting a green pepper with the rest of the veggies and adding fresh lime juice/zest. Absolutely phenomenal

Very well done chef....BUT those chilaquiles needed some sprinkled "cotija cheese" (mexican cheese) when serving them. You can use "feta cheese" instead of cotija if you can´t find it in your country. Cheers.
