    Let's be honest... we weren't going all the way to Huntsville, Alabama to visit Ray Cronise without tasting some of his amazing food. You might not know that Ray is actually a Matthew Kenney and Blue Lotus Culinary graduate. He definitely knows his way around the kitchen and he kept us very well fed during our trip!
    Here’s a little bit about Ray in case you don’t know… he’s the co-author of our favorite whole food plant-based book The Healthspan Solution, host of Science & Saucery podcast (scienceandsauc...), a former NASA scientist and so much more! He’s also the the mastermind behind Penn Jillette’s weight loss, which is what inspired us to get started on this entire adventure over two years ago.
    In today’s video, CrayRay made us some of his Eggplant Rollatini from The Healthspan Solution. The recipe features a sauce inspired by his grandmother and a tangy, creamy Tofu Ricotta. And let me tell you… it did not disappoint!

    Made this this week and my husband actually said he liked it and would have it again! And he is NOT onboard with the whole food plant based way of eating...yet. Very tasty, I thought! I did not have a blender, so ground the cashews in my coffee grinder and mixed in with the rest of the ingredients. And, I didnt have a mandoline either, but cutting the eggplant with a knife was fairly simple. Already had the cookbook from when you first interviewed Ray and Julieanna. YAY! :)

    Huntsville is a great place to visit. Had one of my all time favorite vegan meals at 1892 East Restaurant and Tavern. Going to get Ray's book.

    What Ray said about the US acceptance of food from other cultures before the acceptance of the people was something I haven't really thought about. It's so true. I'd love us to evolve to see the beauty in the people who create those wonderful foods that make our lives so much richer.

    Eggplant is the only vegetable that I haven't loved. I am anxious to try this recipe and this sauce.I'll have to order the cookbook. I dislike having a vegetable that I haven't been able to prepare to my liking.Thanks!

    Thank you for another great episode. The food looks delicious! I watched all your videos on your channel. You are real and very inspiring. Thank you for replying to my question about Taylor and his spud diet. I started my journey about a year ago reading The Starch Solution and wathing videos an youtube and documentaries on Netflix. Now that I reached a weight I’m comfortable with, I look for receipes including some nuts and seeds as well as larger sallads and make this way of eating my own, as you did. I’ll definitely buy the Healthspan Solution. I’m looking forward to your future adventures.

    This looks amazing! I already have the book so I’ll have to make it. I agree about not wasting vegetables! I cleaned out my fridge tonight. Made a big pot of brown rice, then sautéed all the veggies I had left - kale, cabbage, radish, celery, jicama and carrots.

    So have wanted to make this recipe from my cookbook and as the only plant based person In my home I am absolutely Thrilled I can freeze as meals as that’s how I cook my food. Batch cook and freeze. ❤️ I am going to try this in the next few weeks 😊

    I JUST ate one of these today... non vegan though but I’ve made stuffed shells with vegan ingredients and it tasted delish so having these vegan would taste just as good.
    Plus the lack of pasta won’t make me sleepy.

    American friends: wouldn’t it be easier to eat with a knife and a fork? You cut the food with the knife and then use the knife to help you put the food on the fork. Were the boats too heavy and they decided to throw all the knives overboard and then for centuries people had to only use a fork to eat? Eating with only one utensil does not seem productive nor effective. 😆😜 Great vídeo as always!

      Klimt Kahlo We use knives too. They were probably trying to keep it simple and informal but I personally like to use a knife to cut my food into smaller sizes before using a fork.

      krawl b4 Walking 😅🎊👍 we eat very informally with a knife and fork while talking with food in our mouths and all... very informally. We don’t equate formal with using a knife at all times. 😆 Formal is when there is a steak knife, a fish knife, a desert knife, a cheese knife, etc...

    I made this with the recipe for tomato sauce and faux parmesean. Great recipe but my mandolin slicer didn't slice the eggplant thick enough and the eggplant stuck to the parchment paper. Still tasted great.

    I started this diet at the same time you all did. But my life is very stressful and dangerous, thus I have a lot of cortisol which is a fight or flight hormone just like adrenaline. Cortisol tells your body that you are in a crisis and that you do not need to lose weight. I do not like dieting or restricting my calories. The only way that I am ever going to lose the weight is by doing ALTERNATE DAY FASTING. You eat normally one day and then you fast the next day. Then you eat normally again. This way you do not feel deprived because you know you can eat (your plant based diet) normally without restrictions on the next day. The weight is supposed to drop off of you like a bomb. It is a great way to get those last pounds off with going on a starvation diet and feeling deprived.

    Check out this video. It explains all about food addiction and it explains how cheating every now and again Puts you right back at where you were before you started on this journey.       No, this was filmed a couple weeks ago. We were very careful when out and about, and Ray was the only person we were around. All 3 of us hadn't been around people for weeks before hand and we haven't been around people since. 😀 We are all good and healthy. 🙂

    To determine your "ideal, healthy" weight for your height this is how you doing according to Dr. Joel Fuhrman. For Women: 100 pounds for the first 5 feet. 5 pounds for every inch over 5 feet= perfect weight for optimum health. For Men: 105 pounds for the first 5 feet and 5 pounds for every inch over that.

      Oh boy, I'm 4'11" so that makes me about 15lbs overweight. I would look absolutely awful if I was 100lbs. I have been that low before after an illness and it was not a flattering look. Thanks for sharing, I guess we, in the west have become accustomed to looking overweight.
