Not really, it can help the nitrogen dissolve more successfully in the water and then the plant rather than just dumping coffee grounds, the only thing that's unnecessary is probably the cinnamon

The coffee plant grew the tallest. We thought maybe the caffeine had something to do with it. Nice to know!
Coffee ground is also apparently a good cat repellent. The (very cute) cat of my neighbors made my little strawberry field his toilet over the winter. My grandma recommended using coffee grounds, because it's also a good fertilizer. Maybe its anecdotal evidence but it seems to me like it worked.

This realy ony helps certain plants as the ph of coffee is not best for your plants. Did a school test about this where if your mix of coffee to water is more than 2 to 5 the plants just die (how ever this was done with grass, so for a tree and bigger plants its still good).
warning, don't use cinnamon in the coffee grounds if you want to avoid killing the mold/fungi on the plant's roots, also leave out the cinnamon if you're trying to grow a culture or edible fungi (like domestic mushrooms, shitake, lions mane, etc.) because cinnamon is a powerful antibiotic that humans and plants are mostly immune to only use this on farm-style plants like tomatoes, citrus, etc. because the permaculture, aquaponics, and many more exotic crops and growing styles need a whole ecosystem present, but cinnamon kills a lot of the good stuff. in this recipe it's included to prevent your soil from growing mold (in addition to good plant food, old coffee is great mold food), but if you need to preserve the mold/fungi then just avoid messing with it, use a different fertilizer like bonemeal, or just use normal fertilizer like everyone else as a rule of thumb, if you needed "mushroom soil" to start growing it, then coffee grounds might be okay (always be wary of lowering the pH, coffee is acidic) but definitely avoid using cinnamon.
also i have no idea why he added club soda, this recipe would work just fine with still water/well water. the carbonic acid and CO2 would do nothing to make it work any better. maybe he used it to like extract some of the stuff from the coffee? but water will do that just fine
also the club soda is adding more acidity to an already acidic fertilizer (coffee grounds are very acidic) please if you're doing these lifehacks with your beloved plants please please just be wary of your pH, invest in some litmus strips, they're like $5 and they can potentially tell you why your plants are dying

Btw you can eat around the seeds and not destroy them. But I don't know if it makes that big of a difference if you're not planting that many seedlings, because pomegranate has so many.
